Ingredients
Cookie Layer
- 1 cup all-purpose flour
- ½ cup unsalted butter, softened
- ½ cup brown sugar
- ¼ cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- ½ teaspoon baking soda
- ¼ teaspoon salt
- ½ cup chocolate chips
Brownie Layer
- ½ cup unsalted butter, melted
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- ½ cup unsweetened cocoa powder
- ¾ cup all-purpose flour
- ¼ teaspoon salt
- ½ cup chocolate chips
Cheesecake Layer
- 16 oz (450 g) cream cheese, softened
- ½ cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- ½ cup sour cream
Instructions
- Prepare the pan: Preheat the oven to 350°F (175°C). Line a 9-inch springform pan with parchment paper and lightly grease the sides.
- Make the cookie layer: Beat the softened butter, brown sugar, and granulated sugar until creamy. Add the egg and vanilla and mix well. Stir in the flour, baking soda, and salt until a soft dough forms. Fold in the chocolate chips.
- Add to the pan: Press the cookie dough evenly into the bottom of the prepared pan.
- Prepare the brownie batter: Whisk together the melted butter and sugar. Add the eggs and vanilla and whisk until smooth. Stir in the cocoa powder, flour, and salt until just combined. Fold in the chocolate chips.
- Add the brownie layer: Carefully spread the brownie batter over the cookie layer.
- Make the cheesecake mixture: Beat the softened cream cheese and sugar until smooth. Add the eggs one at a time, mixing after each addition. Stir in the vanilla and sour cream until creamy and completely combined.
- Add the cheesecake layer: Gently spread the cheesecake mixture over the brownie batter.
- Bake: Bake for approximately 50–60 minutes, or until the cheesecake is mostly set with a slight jiggle in the center.
- Cool completely: Turn off the oven, crack the door open, and let the cheesecake cool inside for about 30 minutes. Remove it and allow it to cool completely at room temperature.
- Chill: Refrigerate for at least 4 hours, preferably overnight, before removing it from the pan and slicing.
Optional Topping
For an extra-indulgent finish, drizzle the chilled cheesecake with melted chocolate and sprinkle with mini chocolate chips or crushed cookies.
