With no complicated preparation, these cookies are perfect for busy mornings, lunchboxes, or an afternoon snack.
Ingredients
- ½ cup peanut butter
- ½ cup unsweetened applesauce or 1 ripe banana, mashed
- ¼ cup honey or maple syrup
- 1 large egg
- 1½ cups rolled oats
- ½ teaspoon cinnamon
- Pinch of salt
- ⅓ cup chocolate chips
- ⅓ cup dried cranberries
- 2 tablespoons pumpkin seeds or sunflower seeds
- ½ teaspoon vanilla extract
- ½ teaspoon baking powder
Instructions
1. Prepare the Oven
Preheat your oven to 350°F (175°C).
Line a large baking sheet with parchment paper or lightly grease it to prevent sticking.
2. Mix the Wet Ingredients
In a large bowl, combine the peanut butter, applesauce or mashed banana, honey or maple syrup, egg, and vanilla extract.
Whisk or stir until the mixture is smooth and well combined.
3. Add the Dry Ingredients
Add the rolled oats, cinnamon, salt, and baking powder. Stir until everything is evenly incorporated.
Fold in the chocolate chips, dried cranberries, and pumpkin or sunflower seeds.
The mixture will be thick and slightly sticky.
4. Shape the Cookies
Scoop about 2 tablespoons of the mixture onto the prepared baking sheet for each cookie.
Flatten them gently with the back of a spoon because these cookies don’t spread very much during baking.
Leave a little space between each cookie.
5. Bake
Bake for 12–15 minutes, or until the cookies are lightly golden around the edges and feel set in the center.
Be careful not to overbake them, as they are best when they remain soft and chewy.
6. Cool and Serve
Allow the cookies to cool on the baking sheet for about 5 minutes before transferring them to a wire rack.
Let them cool completely before storing.
Helpful Tips
- Use old-fashioned rolled oats for the best chewy texture.
- If using a banana instead of applesauce, choose one that is very ripe for natural sweetness.
- Natural peanut butter works well, but regular creamy peanut butter can also be used.
- For softer cookies, avoid baking them too long.
- If the mixture seems unusually wet, let it rest for 5–10 minutes so the oats can absorb some moisture.
- Add a few extra chocolate chips or seeds to the tops before baking for an appealing finish.
Easy Variations
You can customize these breakfast cookies with your favorite ingredients.
Try adding chopped walnuts, pecans, almonds, raisins, shredded coconut, or chopped dried apricots. For a different flavor, replace some of the cinnamon with a pinch of nutmeg.
If you prefer less sweetness, reduce the honey or maple syrup slightly, especially when using a very ripe banana.
Storage
Store cooled cookies in an airtight container at room temperature for up to 3 days.
For longer storage, refrigerate them for up to 1 week. You can also freeze the cookies in a freezer-safe container for up to 3 months.
Thaw at room temperature or warm briefly before serving.
Serving Ideas
Enjoy these cookies on their own with coffee, tea, or a glass of milk. For a more complete breakfast, serve one or two cookies alongside fresh fruit and yogurt.
These chewy oatmeal breakfast cookies are especially convenient for busy mornings when you need something easy to take with you.
