Naturally sweet, nutty, and wonderfully soft, these easy breakfast bites are a delicious way to start the day. Made with ripe bananas, oats, nuts, and a touch of warm cinnamon, they have a tender texture and satisfying flavor without relying on refined sugar.
They are perfect for busy mornings, meal prep, or a simple snack with a cup of tea or coffee.
Ingredients
- 2 ripe bananas, mashed
- 1½ cups rolled oats
- ½ cup finely chopped walnuts or pecans
- 2 tablespoons natural peanut butter or almond butter
- 1 teaspoon cinnamon
- 1 teaspoon vanilla extract
- ½ teaspoon baking powder
- Pinch of salt
- ¼ cup milk, as needed
- 2 tablespoons raisins or chopped dates, optional
Instructions
1. Prepare the Oven
Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or lightly grease it.
2. Mix the Wet Ingredients
In a large bowl, mash the bananas until mostly smooth.
Stir in the peanut butter or almond butter and vanilla extract until well combined.
3. Add the Dry Ingredients
Add the oats, chopped nuts, cinnamon, baking powder, and salt. Stir everything together until a thick mixture forms.
If the mixture seems too dry, add the milk a tablespoon at a time until it becomes soft and easy to scoop.
Fold in raisins or chopped dates if desired.
4. Shape the Bites
Scoop portions of the mixture onto the prepared baking sheet. Gently flatten each one with the back of a spoon.
5. Bake
Bake for 12–16 minutes, or until the edges are lightly golden and the centers are set.
Be careful not to overbake, as these bites are meant to stay soft and tender.
6. Cool and Serve
Allow the breakfast bites to cool on the baking sheet for about 5 minutes before transferring them to a wire rack.
Serve warm or at room temperature with yogurt, fresh fruit, or your favorite nut butter.
Tips for the Best Breakfast Bites
- Use very ripe bananas for natural sweetness and a softer texture.
- Old-fashioned rolled oats provide a pleasantly chewy texture.
- Chop the nuts finely so they distribute evenly throughout the mixture.
- Add a little extra cinnamon for a warmer flavor.
- Don’t overbake if you want the centers to remain soft.
- If using dates or raisins, chop them into small pieces for even distribution.
Easy Variations
Add shredded coconut, chia seeds, flaxseed, pumpkin seeds, or a handful of dark chocolate chips for extra texture and flavor.
You can also replace the walnuts with almonds, pecans, or cashews depending on what you have available.
Storage
Store cooled breakfast bites in an airtight container at room temperature for up to 2 days or refrigerate for up to 5 days.
They can also be frozen for up to 2 months. Thaw at room temperature or warm briefly before serving.
