This creamy carrot, herb, and chicken cheese spread is a delicious savory mixture that works beautifully as a sandwich filling, cracker topping, party appetizer, or spread for toasted bread. Tender chicken, sweet carrots, cream cheese, and fresh herbs come together for a smooth, flavorful spread that is easy to prepare.
Ingredients
- 1 cup cooked chicken, finely shredded or chopped
- 1 medium carrot, finely grated
- 4 oz (115 g) cream cheese, softened
- 2 tablespoons mayonnaise
- 1 tablespoon sour cream
- 2 tablespoons fresh parsley, finely chopped
- 1 tablespoon fresh chives or green onion, finely chopped
- 1 small garlic clove, minced
- 1/4 teaspoon black pepper
- 1/4 teaspoon salt, or to taste
- 1/2 teaspoon dried Italian herbs
- 1 teaspoon lemon juice
Instructions
1. Prepare the Carrot
Peel and finely grate the carrot. If it seems particularly moist, gently squeeze out some of the excess liquid with a clean paper towel.
2. Make the Creamy Base
Place the softened cream cheese, mayonnaise, and sour cream in a bowl. Mix until smooth and creamy.
Add the garlic, lemon juice, black pepper, salt, and Italian herbs. Stir well.
3. Add the Chicken and Vegetables
Fold in the shredded chicken, grated carrot, parsley, and chives. Mix until everything is evenly distributed.
For a smoother spread, pulse the mixture briefly in a food processor. For a chunkier texture, simply mix it by hand.
4. Chill
Cover and refrigerate for 30–60 minutes before serving. Chilling allows the herbs and seasonings to blend with the creamy base.
Serving Ideas
Spread it over:
- Toasted bread or baguettes

It also makes a tasty filling for stuffed pita bread or tortilla rolls.
