Serves: 8–10
Prep Time: 20 minutes
Cook Time: 10 minutes
Ingredients
Layer 1: Lettuce
- 1 large head romaine lettuce, chopped (about 8 cups)
Layer 2: Beans
- 1 can (15 oz / 425 g) refried beans
Layer 3: Seasoned Meat
- 1 lb (450 g) ground beef or turkey
- 1 packet taco seasoning, or 2 tablespoons homemade taco seasoning
- ¼ cup water
Layer 4: Sour Cream Layer
- 1 cup sour cream
- 4 oz (115 g) cream cheese, softened
Layer 5: Salsa
- 1 cup salsa
Layer 6: Cheese
- 2 cups shredded cheddar or Mexican-blend cheese
Layer 7: Toppings
- 2 medium tomatoes, diced
- ¼ cup sliced black olives
- 2 green onions, sliced
- 1 avocado, diced (optional)
Instructions
1. Cook the Meat
Brown the ground beef or turkey in a large skillet over medium heat, breaking it apart as it cooks. Drain any excess fat.
Add the taco seasoning and water. Stir well and simmer for 3–5 minutes, until the mixture thickens. Remove from the heat and let it cool slightly.
2. Prepare the Creamy Layer
In a medium bowl, beat the softened cream cheese and sour cream together until smooth and creamy. Set aside.
3. Assemble the Salad
Use a large glass serving bowl or a 9×13-inch baking dish.
Spread the ingredients evenly in the following order:
- Chopped romaine lettuce
- Refried beans
- Seasoned ground beef or turkey
- Sour cream and cream cheese mixture
- Salsa
- Shredded cheddar or Mexican-blend cheese
- Diced tomatoes, black olives, and green onions
If using avocado, add it just before serving to help prevent browning.
4. Chill
Cover the salad and refrigerate for at least 30 minutes before serving. This gives the flavors time to come together while keeping the salad nicely chilled.
Tips for the Best 7-Layer Taco Salad
- Let the seasoned meat cool before assembling so it doesn’t wilt the lettuce.
- Use thick refried beans and salsa to help keep the layers distinct.
- For a little extra flavor, stir a teaspoon of taco seasoning into the sour cream mixture.
- Add avocado shortly before serving for the freshest flavor and texture.
- For extra crunch, serve with tortilla chips or crushed tortilla chips on top.
- If preparing ahead, wait to add the avocado and crunchy toppings until just before serving.
Make It Your Own
You can add corn, jalapeños, cilantro, bell peppers, pinto beans, or sliced black olives to customize the salad. A Mexican cheese blend also works especially well for a richer, more flavorful topping.
Serving
Spoon the salad from the bottom of the dish so each serving gets a little of every layer. Serve chilled with tortilla chips, cornbread, or as a side dish alongside grilled chicken or fajitas.
Storage
Store leftovers covered in the refrigerator and enjoy within 1–2 days for the best texture. The lettuce and fresh vegetables will gradually soften as they sit.
