A rich, creamy cheesecake with a buttery biscuit crust, silky vanilla filling, and beautiful ribbons of caramel swirled throughout. It is an elegant dessert that looks impressive but is surprisingly simple to make.
Ingredients
For the Crust
- 2 cups graham cracker or digestive biscuit crumbs
- 5 tablespoons unsalted butter, melted
- 2 tablespoons granulated sugar
For the Cheesecake Filling
- 24 oz (680 g) cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup sour cream
- 2 tablespoons all-purpose flour
For the Caramel Swirl
- 1/2 cup thick caramel sauce
- 1 tablespoon heavy cream, if needed to loosen the caramel
- Pinch of sea salt, optional
Instructions
1. Prepare the Crust
Preheat your oven to 325°F (165°C).
Mix the biscuit crumbs, melted butter, and sugar until evenly combined. Press the mixture firmly into the bottom of a 9-inch springform pan.
Bake for 8–10 minutes, then remove and let it cool slightly.
2. Make the Cheesecake Filling
Beat the softened cream cheese and sugar until smooth and creamy. Avoid overmixing, as incorporating too much air can cause cracks.
Add the eggs one at a time, mixing just until each one is incorporated.
Mix in the vanilla, sour cream, and flour until smooth.
3. Add the Caramel Swirl
Pour about half of the cheesecake batter over the cooled crust.
Drizzle several spoonfuls of caramel sauce over the batter. Add the remaining cheesecake batter, then drizzle more caramel on top.
Use a thin knife or skewer to gently swirl the caramel through the cheesecake. Don’t over-swirl, or the caramel pattern may disappear.
4. Bake
Bake for approximately 55–70 minutes, or until the edges are set but the center still has a slight wobble.
Turn off the oven, crack the door open, and leave the cheesecake inside for about 30 minutes.
Remove it and allow it to cool completely at room temperature.
5. Chill
Refrigerate the cheesecake for at least 6 hours, preferably overnight, before removing it from the pan and slicing.
For serving, drizzle with additional caramel sauce and add a small pinch of flaky sea salt if desired.
Tips for the Best Caramel Swirl Cheesecake
- Use room-temperature cream cheese for the smoothest filling.
- Don’t overmix the batter after adding the eggs.
- Make sure the caramel sauce is thick enough to create defined swirls.
- Let the cheesecake chill thoroughly before slicing.
- For clean slices, dip a sharp knife in hot water, wipe it dry, and cut the cheesecake.
Serving Ideas
Serve each slice with extra caramel sauce, whipped cream, chopped toasted pecans, or a scoop of vanilla ice cream.
Storage
Keep the cheesecake covered in the refrigerator for up to 4–5 days. Individual slices can also be wrapped well and frozen for up to 2 months.
