These Boston Cream Pie Cookies bring all the classic flavors of a Boston cream pie into a delicious handheld treat. Soft, tender vanilla cookies are filled with silky pastry cream and finished with a rich, glossy chocolate glaze. They look impressive but are surprisingly easy to make.
Ingredients
For the Cookie Base
- 2½ cups all-purpose flour
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- ½ cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- ½ cup whole milk
For the Pastry Cream Filling
- 1 cup whole milk
- ½ cup heavy cream
- ¼ cup granulated sugar
- 2 large egg yolks
- 2 tablespoons cornstarch
- 1 teaspoon vanilla extract
For the Chocolate Glaze
- ½ cup heavy cream
- 4 oz semi-sweet chocolate, chopped
- 1 tablespoon unsalted butter
Instructions
1. Prepare the Cookies
Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
In a separate large bowl, beat the softened butter and sugar until creamy and smooth. Add the eggs one at a time, followed by the vanilla extract, mixing well after each addition.
Gradually add the dry ingredients to the butter mixture, alternating with the milk. Mix just until a soft dough forms. Avoid overmixing.
Scoop tablespoon-sized portions of dough onto the prepared baking sheet, leaving space between each cookie. Gently flatten each portion with your fingers or the back of a spoon.
Bake for 10–12 minutes, or until the edges are lightly golden.
Allow the cookies to cool on the baking sheet for a few minutes, then transfer them to a wire rack to cool completely.
2. Make the Pastry Cream
Add the milk, heavy cream, sugar, egg yolks, and cornstarch to a saucepan. Whisk thoroughly until smooth.
Cook over medium heat, stirring constantly, until the mixture thickens into a smooth custard.
Remove from the heat and stir in the vanilla extract.
Transfer the pastry cream to a bowl and cover the surface directly with plastic wrap to prevent a skin from forming. Let it cool, then refrigerate until completely chilled.
3. Prepare the Chocolate Glaze
Place the chopped chocolate in a heatproof bowl.
Heat the heavy cream in a small saucepan over medium heat until it just begins to simmer. Do not boil.
Pour the hot cream over the chocolate and let it sit for about 1 minute. Add the butter and gently stir until the chocolate is completely melted and the mixture is smooth and glossy.
Allow the glaze to cool slightly so it thickens enough to spread without running excessively.
4. Fill the Cookies
Once the cookies and pastry cream are completely chilled, transfer the pastry cream to a piping bag.
Pipe a generous amount of pastry cream onto the flat side of half of the cookies.
Top with the remaining cookies, gently pressing them together to create little cookie sandwiches.
5. Add the Chocolate Glaze
Spoon or spread a layer of chocolate glaze over the top of each filled cookie.
Let the glaze sit for several minutes to set. For a firmer chocolate topping, refrigerate the cookies for about 20–30 minutes.
Tips for Perfect Boston Cream Pie Cookies

- Refrigerate the finished cookies for a short time before serving for a firmer filling.
Storage
