These classic Stuffed Bell Peppers are an easy and comforting family dinner. Sweet bell peppers are filled with a savory mixture of seasoned ground beef, rice, tomatoes, and cheese, then baked until tender and delicious. They’re filling, flavorful, and perfect for a cozy weeknight meal.
Ingredients
- 6 large bell peppers
- 1 lb ground beef
- 1 small onion, finely diced
- 2 cloves garlic, minced
- 1 cup cooked white or brown rice
- 1 can (14.5 oz) diced tomatoes, drained
- 1 cup tomato sauce
- 1 teaspoon Italian seasoning
- 1 teaspoon paprika
- ½ teaspoon garlic powder

- ¼ teaspoon black pepper
- 1 cup shredded cheddar or mozzarella cheese

Instructions
1. Prepare the Peppers
Preheat the oven to 375°F (190°C).
Wash the bell peppers and cut off the tops. Remove the seeds and membranes from inside.
Arrange the peppers upright in a lightly greased baking dish. Pour the beef broth or water into the bottom of the dish.
2. Cook the Beef
Heat the olive oil in a large skillet over medium heat. Add the ground beef and onion.
Cook for 6–8 minutes, breaking the beef apart, until browned and the onion is softened.
Add the minced garlic and cook for another 30 seconds. Drain excess grease if necessary.
3. Make the Filling
Stir the cooked rice, diced tomatoes, tomato sauce, Italian seasoning, paprika, garlic powder, salt, and black pepper into the beef mixture.
Cook for 2–3 minutes, stirring until everything is well combined and heated through.
4. Stuff the Peppers
Spoon the beef and rice mixture evenly into each bell pepper, filling them generously.
Cover the baking dish tightly with aluminum foil.
5. Bake
Bake for 35–40 minutes, or until the peppers begin to soften.
Remove the foil and sprinkle the shredded cheese over each pepper.
Return to the oven and bake uncovered for another 10–15 minutes, until the cheese is melted and bubbly and the peppers are tender.
6. Serve
Allow the stuffed peppers to rest for about 5 minutes before serving.
Garnish with fresh parsley or green onions if desired.
