Directions
1. Prepare the Potatoes
Preheat your oven to 350°F (175°C).
Peel the potatoes and slice them very thinly, preferably using a mandoline.
Don’t boil the potatoes first—the thin slices need to remain flexible enough to form the roll.
2. Create the Potato Base
Line a baking tray with parchment paper and lightly brush it with melted butter.
Arrange the potato slices in overlapping rows, creating a rectangular sheet.
The slices should overlap slightly so there are no large gaps.
Sprinkle with salt, pepper, and about ½ cup mozzarella cheese.

3. Prepare the Filling
While the potato base is baking, heat olive oil in a skillet over medium heat.

Important:

5. Add the Filling
Remove the partially baked potato sheet from the oven.

Leave approximately 1 inch around the edges uncovered so the filling doesn’t spill out when you roll it.
Sprinkle the cheddar cheese over the filling.
6. Roll the Potato
Starting from one of the long sides, carefully begin rolling the potato sheet.
