Soft, buttery, and filled with tender pieces of apple and ribbons of cinnamon sugar, this Homemade Apple Cinnamon Swirl Loaf is the kind of simple bake that makes the whole kitchen smell amazing. It’s perfect with a cup of coffee or tea for breakfast, an afternoon snack, or a cozy dessert.
Ingredients
For the Cinnamon Swirl
- 1/3 cup light brown sugar
- 1 1/2 teaspoons ground cinnamon
For the Loaf
- 1/2 cup unsalted butter, softened
- 2/3 cup granulated sugar
- 2 large eggs
- 1 1/2 teaspoons vanilla extract
- 1 1/2 cups all-purpose flour
- 1 3/4 teaspoons baking powder
- 1/4 teaspoon salt
- 1/2 cup milk
- 1 large apple, peeled, cored, and finely diced
Optional Vanilla Glaze
- 1/2 cup powdered sugar
- 1–2 tablespoons milk
- 1/2 teaspoon vanilla extract
Instructions
1. Prepare the Oven and Pan
Preheat your oven to 350°F (175°C).
Grease a 9 × 5-inch loaf pan and line it with parchment paper, leaving some overhang to make removing the loaf easier.
2. Make the Cinnamon Sugar
In a small bowl, combine the brown sugar and cinnamon. Mix well and set aside.
3. Cream the Butter and Sugar
In a large mixing bowl, beat the softened butter and granulated sugar until light and fluffy, about 2–3 minutes.
Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
4. Add the Dry Ingredients
In a separate bowl, whisk together the flour, baking powder, and salt.
Gradually add the dry ingredients to the butter mixture, alternating with the milk. Mix just until the batter comes together. Avoid overmixing, as this can make the loaf dense.
5. Add the Apples
Gently fold the diced apple into the batter until evenly distributed.
Firm apples such as Granny Smith, Honeycrisp, Gala, or Fuji work especially well.
6. Create the Cinnamon Swirl
Spread half of the batter into the prepared loaf pan.
Sprinkle about half of the cinnamon-sugar mixture evenly over the batter.
Add the remaining batter and gently spread it into an even layer. Sprinkle the remaining cinnamon sugar over the top.
Using a butter knife, gently swirl through the batter a few times. Don’t over-swirl, or the cinnamon layer may disappear into the batter.
7. Bake
Bake for 50–60 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
If the top begins browning too quickly, loosely cover the loaf with aluminum foil during the final 10–15 minutes.
8. Cool
Allow the loaf to cool in the pan for about 10–15 minutes.
Carefully lift it out using the parchment paper and transfer it to a wire rack. Let it cool further before slicing so the loaf has time to set.
Optional Vanilla Glaze
For an extra sweet finish, whisk together powdered sugar, milk, and vanilla until smooth.
Drizzle the glaze over the completely cooled loaf and allow it to set for a few minutes before serving.
Helpful Tips
- Don’t overmix: Mix the batter only until the flour disappears.
- Use firm apples: They hold their texture better during baking.
- Dice the apples small: Smaller pieces distribute more evenly throughout the loaf.
- Cool before slicing: This helps the cinnamon swirl stay defined.
- Add nuts: Chopped walnuts or pecans make a delicious addition.
- Extra cinnamon: Add a small pinch of nutmeg to the cinnamon mixture for a warmer flavor.
How to Store
Store the cooled loaf tightly wrapped or in an airtight container at room temperature for up to 3 days.
For longer storage, refrigerate it for up to 5 days. Individual slices can also be wrapped and frozen for up to 2 months.
Let refrigerated slices come to room temperature or warm them gently before serving.
