Slow Cooker Rich & Flavorful Beef Roast
Pour this simple, savory mixture over a raw beef roast and let your slow cooker do the work! The result is tender, juicy beef with rich gravy and incredible flavor—the perfect comforting weeknight dinner.
Ingredients
- 3–4 lb beef chuck roast
- 1 packet onion soup mix
- 1 packet brown gravy mix
- 1 can cream of mushroom soup
- 1 cup beef broth
- 1 tablespoon Worcestershire sauce
- 1 teaspoon garlic powder
- ½ teaspoon black pepper
- 1 medium onion, sliced
- 2 tablespoons olive oil, optional for searing
Instructions
1. Prepare the roast
Pat the beef roast dry and season lightly with black pepper and garlic powder.
2. Optional searing step
For extra flavor, heat the olive oil in a large skillet and sear the roast for 2–3 minutes per side until browned. This step is optional but adds a delicious depth of flavor.
3. Make the mixture
In a bowl, whisk together the cream of mushroom soup, beef broth, onion soup mix, brown gravy mix, and Worcestershire sauce until well combined.
4. Assemble the slow cooker
Place the sliced onions in the bottom of the slow cooker. Put the beef roast on top, then pour the mixture evenly over the roast.
5. Slow cook
Cover and cook on LOW for 8–9 hours or until the beef is fork-tender. Avoid lifting the lid frequently, as this can increase cooking time.
6. Serve
Transfer the tender roast to a serving platter. Spoon the rich gravy over the top and serve with mashed potatoes, roasted vegetables, rice, or warm dinner rolls.
Tip
For an extra-complete meal, add carrots and baby potatoes around the roast during cooking. They’ll soak up all that delicious savory gravy.
