These Potato Cheese Rolls are crispy on the outside, soft and cheesy on the inside, and incredibly easy to make. Mashed potatoes are combined with melted cheese and flavorful seasonings, wrapped in a crunchy coating, and fried until golden brown. They make a delicious appetizer, snack, side dish, or party treat.
Ingredients
For the Potato Filling
- 3 large potatoes, peeled and cubed
- 1 cup shredded mozzarella cheese
- ½ cup shredded cheddar cheese
- 2 tablespoons chopped fresh parsley
- ½ teaspoon garlic powder
- ½ teaspoon paprika
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 1 green onion, finely chopped
- 1 tablespoon butter
For the Rolls
- 10–12 spring roll wrappers or egg roll wrappers
- 2 tablespoons all-purpose flour
- 3 tablespoons water
- Vegetable oil, for frying
Instructions
1. Cook the Potatoes
Place the peeled potatoes in a large saucepan and cover them with water.
Add a small pinch of salt and bring to a boil.
Cook for approximately 15–20 minutes, or until the potatoes are fork-tender.
Drain thoroughly.
2. Make the Potato Filling
Transfer the hot potatoes to a large bowl.
Add the butter, garlic powder, paprika, salt, and black pepper.
Mash until mostly smooth.
Stir in the mozzarella, cheddar, green onion, and parsley.
Mix until everything is evenly combined and the cheese begins to melt slightly.
Allow the mixture to cool until it is easy to handle.
3. Prepare the Sealing Mixture
In a small bowl, mix the flour and water together until you have a smooth paste.
This will be used to seal the rolls.
4. Fill the Wrappers
Place one wrapper on a clean surface with one corner pointing toward you.
Add approximately 2 tablespoons of potato filling near the bottom center.
Fold the bottom corner over the filling.
Fold in both sides, then roll tightly toward the top corner.
Brush the final corner with a little flour paste and seal.
Repeat with the remaining wrappers and filling.
5. Fry the Potato Cheese Rolls
Heat about 2 inches of vegetable oil in a deep skillet over medium heat to approximately 350°F (175°C).
Carefully place the rolls into the hot oil, working in batches so the pan isn’t overcrowded.
Fry for approximately 2–3 minutes per side, turning as needed, until golden brown and crispy.
Transfer to a paper towel-lined plate or wire rack to drain.
6. Serve
Allow the rolls to cool for a few minutes before serving.
Serve warm with your favorite dipping sauce.
Air Fryer Method
For a lighter option:
- Preheat the air fryer to 375°F (190°C).
- Lightly brush or spray the rolls with oil.
- Arrange them in a single layer.
- Air fry for 8–12 minutes, turning halfway through.
- Cook until golden and crisp.
Baking Method
Preheat the oven to 425°F (220°C).
Place the prepared rolls on a parchment-lined baking sheet and lightly brush them with oil.
Bake for 18–22 minutes, turning halfway through, until crisp and golden.
Tips for Perfect Potato Cheese Rolls
- Drain the potatoes well so the filling isn’t watery.
- Let the filling cool slightly before rolling.
- Don’t overfill the wrappers because the cheese can leak during cooking.
- Roll the wrappers tightly to prevent them from opening.
- Keep unused wrappers covered with a slightly damp kitchen towel so they don’t dry out.
- Maintain the oil temperature around 350°F for crisp, evenly cooked rolls.
