Ingredients
For the Chicken
- 2½–3 lbs chicken pieces
- 2 cups buttermilk
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp paprika
- 1 tsp garlic powder
- ½ tsp onion powder
- ½ tsp cayenne pepper, optional
For the Crispy Coating
- 2 cups all-purpose flour
- ½ cup cornstarch
- 1 tsp paprika
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp salt
- 1 tsp black pepper
- ½ tsp cayenne pepper
- ½ tsp dried thyme
- ½ tsp dried oregano
For Frying
- Vegetable or peanut oil, enough for deep frying
Instructions
- Marinate the chicken
Place the chicken pieces in a large bowl. Add buttermilk, salt, pepper, paprika, garlic powder, onion powder, and cayenne. Mix well, cover, and refrigerate for at least 4 hours, preferably overnight. - Prepare the coating
In a large bowl, whisk together flour, cornstarch, paprika, garlic powder, onion powder, salt, pepper, cayenne, thyme, and oregano. - Coat the chicken
Remove a piece of chicken from the marinade, allowing excess buttermilk to drip off. Dredge it thoroughly in the seasoned flour, pressing the flour onto the chicken. For an extra-crispy crust, dip it briefly back into the buttermilk and coat it in the flour a second time. - Heat the oil
Heat oil to approximately 350°F (175°C) in a heavy, deep skillet or Dutch oven. Don’t overcrowd the pan. - Fry the chicken
Carefully add the chicken pieces and fry in batches. Cook until deeply golden and the chicken reaches a safe internal temperature of 165°F (74°C) in the thickest part. - Drain
Transfer the fried chicken to a wire rack set over a baking sheet. Let excess oil drain away while keeping the crust crisp.
🔥 Tips for Extra-Crispy Chicken
- Marinate overnight for more flavorful and tender chicken.
- Cornstarch helps create a lighter, crunchier crust.
- Press the seasoned flour firmly onto the chicken.
- Keep the oil around 350°F and avoid overcrowding.
- A wire rack is better than paper towels because it prevents the bottom from becoming soggy.
Serve hot with mashed potatoes, coleslaw, biscuits, or crispy fries for a complete fried-chicken feast.
