- 1 lb (450 g) sirloin steak, cut into bite-sized cubes
- 4 large eggs
- 2 tablespoons unsalted butter
- 1 tablespoon olive oil
- 4 cloves garlic, minced
- 1 teaspoon Worcestershire sauce
- ½ teaspoon smoked paprika
- ½ teaspoon Italian seasoning
- ½ teaspoon salt
- ½ teaspoon black pepper

1. Prepare the Steak
Pat the steak pieces dry with paper towels.

2. Sear the Steak Bites

Once hot, add the steak bites in a single layer. Avoid overcrowding the pan; cook in batches if necessary.

Transfer the steak to a plate.
3. Make the Garlic Butter
Reduce the heat to medium.
Add the butter to the same skillet.
Once melted, add the minced garlic and red pepper flakes if using.

Add the Worcestershire sauce and stir to combine.
4. Return the Steak
Return the steak bites to the skillet.
Toss them through the garlic butter for 1–2 minutes until coated and heated through.
Push the steak bites toward the sides of the skillet, leaving some space in the center.
5. Cook the Eggs
Add a little extra butter to the center if needed.
Crack the eggs directly into the skillet.

For fully cooked yolks, cook a little longer.
