Spicy Creole Gumbo Ramen
A bold fusion of Louisiana-style Creole gumbo and comforting ramen, loaded with smoky sausage, tender chicken, vegetables, and springy noodles in a spicy, richly seasoned broth. It’s hearty, warming, and packed with flavor.

For the Gumbo Ramen
- 2 tablespoons vegetable oil
- 2 tablespoons all-purpose flour
- 1 medium onion, diced
- 1 green bell pepper, diced
- 2 celery stalks, diced
- 4 cloves garlic, minced
- 8 oz (225 g) smoked andouille sausage, sliced
- 1 lb (450 g) boneless chicken thighs or breasts, cut into bite-sized pieces
- 4 cups (960 ml) chicken broth
- 1 can (14.5 oz / 411 g) diced tomatoes
- 2 tablespoons tomato paste
- 1 tablespoon Worcestershire sauce
- 1 teaspoon Creole seasoning
- 1 teaspoon smoked paprika
- ½ teaspoon dried thyme
- ½ teaspoon dried oregano
- ¼–½ teaspoon cayenne pepper, to taste
- 2 bay leaves
- 2 cups sliced okra, fresh or frozen
- 3 packages ramen noodles, seasoning packets discarded
- 2 green onions, sliced
- 2 tablespoons fresh parsley, chopped
Optional
- ½ lb (225 g) peeled shrimp
- Hot sauce, to taste
- Fresh lemon wedges

1. Make the Roux
Heat the vegetable oil in a large heavy-bottomed pot over medium heat.
Gradually whisk in the flour.
Cook, stirring constantly, for 5–8 minutes, until the roux becomes a deep golden-brown color.
Be careful not to burn it. If the roux smells burnt, it’s best to start again.
2. Add the Vegetables
Add the onion, bell pepper, and celery.
Cook for 5–7 minutes, stirring occasionally, until the vegetables begin to soften.
Add the garlic and cook for another 30 seconds.
3. Brown the Meat
Add the sliced sausage and chicken.
Cook for approximately 5–7 minutes, stirring occasionally, until the sausage is browned and the chicken is lightly browned on the outside.
4. Build the Gumbo Broth
Pour in the chicken broth and diced tomatoes.
Stir in the tomato paste, Worcestershire sauce, Creole seasoning, smoked paprika, thyme, oregano, cayenne, and bay leaves.
Bring the mixture to a gentle boil.
5. Simmer
Reduce the heat and simmer uncovered for approximately 25–30 minutes, stirring occasionally.
Add the sliced okra during the final 15 minutes of simmering.
The chicken should be cooked through and the broth should become rich and flavorful.
6. Add Shrimp, If Using
If adding shrimp, stir them into the simmering gumbo during the final 3–5 minutes.
Cook just until the shrimp are opaque and cooked through.
7. Add the Ramen
Break the ramen noodles slightly if desired and add them directly to the pot.
Cook according to the noodle package directions, usually 2–4 minutes.
Don’t overcook them.
Remove the bay leaves.
8. Finish and Serve
Taste and adjust the Creole seasoning, cayenne, or hot sauce.
Ladle the spicy gumbo ramen into bowls.
Top with sliced green onions and fresh parsley.
Serve with lemon wedges and extra hot sauce for those who like it fiery.
