For the Gravy

- 8 oz (225 g) mushrooms, sliced
- 2 cups beef broth
- 1 can (10.5 oz / 298 g) cream of mushroom soup
- 1 tablespoon Worcestershire sauce
- 1 teaspoon Dijon mustard
- ½ teaspoon garlic powder
- ½ teaspoon black pepper
- 2 tablespoons cornstarch
- 3 tablespoons cold water
👩🍳 Instructions
1. Make the Hamburger Steaks
In a large bowl, combine the ground beef, egg, breadcrumbs, milk, diced onion, garlic, Worcestershire sauce, Italian seasoning, garlic powder, onion powder, salt, and pepper.
Mix gently until just combined.
Don’t overwork the meat or the steaks may become tough.
2. Shape the Patties
Divide the mixture into 5–6 portions.
Shape each portion into a thick oval patty, approximately ¾-inch thick.
3. Sear the Patties
Heat the olive oil in a large skillet over medium-high heat.
Sear the hamburger steaks for approximately 2–3 minutes per side, just until browned.
They don’t need to be cooked through at this stage.
Transfer them to the crockpot.
4. Add the Vegetables
Arrange the sliced onions and mushrooms around and over the hamburger steaks.
5. Make the Gravy
In a bowl, whisk together the beef broth, cream of mushroom soup, Worcestershire sauce, Dijon mustard, garlic powder, and black pepper.
Pour the gravy mixture over the hamburger steaks.
6. Slow Cook
Cover and cook on:
- LOW for 5–6 hours, or
- HIGH for 2½–3½ hours
Cook until the beef is fully cooked and tender.
7. Thicken the Gravy
About 15–20 minutes before serving, mix the cornstarch with cold water to make a smooth slurry.
Stir it into the gravy.
Cover and continue cooking until the gravy thickens.
8. Serve
Carefully transfer the hamburger steaks to plates.
Spoon plenty of onion, mushroom, and gravy over the top.
Serve immediately with mashed potatoes, rice, or noodles.
⭐ Tips for the Best Hamburger Steaks
- Don’t overmix the ground beef mixture.
- Searing the patties first adds extra flavor, although you can skip this step if you’re short on time.
- Use ground beef with enough fat to keep the patties moist.
- Don’t add cornstarch at the beginning; it can lose its thickening power during long cooking.
- Let the finished steaks rest for a few minutes before serving.
