Toffee Rum Cookies

- 1 cup (226 g) unsalted butter, softened
- ¾ cup (150 g) brown sugar, packed
- ½ cup (100 g) granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon rum extract
- 2 tablespoons dark rum, optional
- 2¼ cups (280 g) all-purpose flour
- 1 teaspoon baking soda
- ½ teaspoon salt
- 1 cup (170 g) toffee bits
- ½ cup (85 g) semisweet chocolate chips, optional
- ½ cup chopped pecans or walnuts, optional

1. Prepare the Oven
Preheat your oven to 350°F (175°C).
Line two baking sheets with parchment paper.
2. Cream the Butter and Sugars
In a large bowl, beat the softened butter, brown sugar, and granulated sugar for 2–3 minutes, until light and creamy.
Add the eggs one at a time, mixing well after each addition.
Stir in the vanilla and rum extract.
If using dark rum, mix it in at this stage.
3. Combine the Dry Ingredients
In a separate bowl, whisk together the flour, baking soda, and salt.
Gradually add the dry ingredients to the butter mixture.
Mix just until a soft dough forms.
Avoid overmixing.
4. Add the Toffee
Fold in the toffee bits.
Add chocolate chips and chopped nuts if desired.
5. Shape the Cookies
Scoop approximately 1½ tablespoons of dough for each cookie.
Place the dough balls on the prepared baking sheets, leaving about 2 inches of space between them.
For extra flavor, press a few additional toffee pieces onto the tops.
6. Bake
Bake for 9–12 minutes, until the edges are golden brown but the centers still look slightly soft.
Don’t overbake—the cookies will continue to firm up as they cool.
7. Cool
Let the cookies cool on the baking sheet for 5 minutes.
Transfer them to a wire rack to cool completely.
