Crockpot Dorito Taco Salad
A fun and hearty twist on taco salad featuring seasoned slow-cooked beef, crunchy Doritos, fresh lettuce, tomatoes, cheese, and creamy taco-inspired toppings. It’s an easy family-friendly meal with plenty of crunch and bold Tex-Mex flavor.
🌮 Ingredients
For the Taco Meat
- 1½ lbs (680 g) ground beef
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 packet taco seasoning
- ½ cup water
- 1 can (15 oz / 425 g) black beans, drained and rinsed
- 1 cup salsa
For the Salad
- 1 large head romaine or iceberg lettuce, chopped
- 2 cups Doritos, lightly crushed
- 1½ cups shredded cheddar cheese
- 1 cup cherry tomatoes, halved
- ½ cup red onion, diced
- ½ cup corn, drained
- 1 avocado, diced
- ¼ cup sliced jalapeños, optional
- ¼ cup fresh cilantro, chopped
For the Dressing
- ½ cup sour cream
- ½ cup salsa
- 2 tablespoons mayonnaise
- 1 tablespoon lime juice
- ½ teaspoon taco seasoning

1. Brown the Beef
Heat a skillet over medium-high heat.
Add the ground beef and diced onion.
Cook for approximately 6–8 minutes, breaking the beef apart as it cooks, until browned.
Drain excess grease.
Add the minced garlic and cook for another 30 seconds.
2. Add Everything to the Crockpot
Transfer the cooked beef and onion to the slow cooker.
Add the taco seasoning, water, black beans, and salsa.
Stir everything together.
Cover and cook on:
- LOW: 3–4 hours
- HIGH: 1½–2 hours
Since the beef is already cooked, the slow cooker is mainly allowing the flavors to combine and heat through.
3. Prepare the Dressing
While the taco mixture cooks, whisk together the sour cream, salsa, mayonnaise, lime juice, and taco seasoning.
Refrigerate until ready to serve.
4. Prepare the Salad
Place the chopped lettuce in a large serving bowl.
Add the tomatoes, red onion, corn, avocado, jalapeños, and cilantro.
Toss gently.
5. Add the Taco Meat
Spoon the warm taco meat mixture over the salad.
Sprinkle generously with shredded cheddar cheese.
6. Add the Doritos
Crush the Doritos into bite-sized pieces.
Add them right before serving so they stay crispy.
Drizzle with the taco dressing or serve it on the side.
Toss gently and serve immediately.
