Baked Pineapple Salmon
Tender, flaky salmon baked with juicy pineapple and a sweet, tangy glaze made with honey, garlic, soy sauce, and fresh lime. This easy dinner is packed with bright tropical flavor and comes together with minimal effort.

For the Salmon
- 4 salmon fillets, about 6 oz (170 g) each
- 1 cup fresh or canned pineapple chunks
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 2 tablespoons honey
- 2 tablespoons low-sodium soy sauce
- 1 tablespoon fresh lime juice
- 1 teaspoon Dijon mustard
- ½ teaspoon paprika
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ½ teaspoon grated fresh ginger, optional
For Garnish
- 2 tablespoons chopped fresh cilantro or parsley
- Lime wedges
- 1 tablespoon sliced green onions
- Sesame seeds, optional

1. Prepare the Oven
Preheat your oven to 400°F (200°C).
Line a baking dish or sheet pan with parchment paper or lightly grease it.
2. Prepare the Glaze
In a small bowl, whisk together the olive oil, honey, soy sauce, lime juice, Dijon mustard, garlic, paprika, black pepper, and ginger if using.
Taste and adjust the sweetness or tanginess if desired.
3. Prepare the Salmon
Pat the salmon fillets dry with paper towels.
Place them skin-side down in the prepared baking dish.
Season lightly with salt and black pepper.
Arrange the pineapple chunks around and on top of the salmon.
Pour or brush the honey-soy glaze generously over each fillet.
4. Bake
Bake uncovered for approximately 12–16 minutes, depending on the thickness of the salmon.
The salmon should flake easily with a fork and reach an internal temperature of 145°F (63°C) for food safety.
For a more caramelized finish, broil for 1–2 minutes at the end, watching carefully so the honey doesn’t burn.
5. Garnish and Serve
Remove the salmon from the oven.
Spoon some of the warm pineapple and glaze over each fillet.
Garnish with fresh cilantro or parsley, green onions, and sesame seeds if desired.
Serve with fresh lime wedges.
