Gooey Caramel Pecan Sticky Buns

For the Dough
- ¾ cup warm whole milk
- 2¼ teaspoons active dry yeast
- ¼ cup granulated sugar
- 2 large eggs
- 4 tablespoons unsalted butter, melted

- ½ teaspoon salt

- ¾ cup packed brown sugar
- 2 teaspoons ground cinnamon

- ½ cup unsalted butter
- 1 cup packed brown sugar
- ⅓ cup heavy cream
- ¼ cup honey or maple syrup
- 1 teaspoon vanilla extract
- ¼ teaspoon salt
- 1½ cups chopped pecans

1. Make the Dough
Pour the warm milk into a large bowl. Stir in the yeast and 1 tablespoon of the sugar.
Let it stand for 5–10 minutes, until foamy.
Add the remaining sugar, eggs, melted butter, and vanilla.
Gradually add the flour and salt, mixing until a soft dough forms.
Knead for approximately 6–8 minutes until smooth and elastic.
Place the dough in a lightly greased bowl, cover, and let rise in a warm place for about 1–1½ hours, or until doubled in size.
2. Prepare the Caramel Pecan Topping
Melt the butter in a saucepan over medium heat.
Add the brown sugar, heavy cream, honey or maple syrup, vanilla, and salt.
Cook for 2–3 minutes, stirring until smooth and glossy.
Pour the caramel into a greased 9×13-inch baking dish.
Sprinkle the chopped pecans evenly over the caramel.
3. Roll Out the Dough
Punch down the risen dough.
Transfer it to a lightly floured surface and roll it into approximately a 16×12-inch rectangle.
Spread the softened butter evenly over the dough.
Mix the brown sugar, cinnamon, and salt together, then sprinkle evenly over the butter.
4. Roll and Cut
Starting from one long side, tightly roll the dough into a log.
Cut into 12 equal pieces using a sharp knife or unflavored dental floss.
Arrange the rolls cut-side up over the caramel and pecans, leaving a little space between them.
5. Second Rise
Cover the baking dish loosely with a clean towel or plastic wrap.
Let the buns rise for approximately 30–45 minutes, until noticeably puffy.
Meanwhile, preheat the oven to 350°F (175°C).
6. Bake
Bake the sticky buns for 25–32 minutes, until golden brown and cooked through.
Don’t overbake them, as you want the centers to remain soft and tender.
7. Flip the Sticky Buns
Let the baked buns cool for only about 5–10 minutes.
Place a large serving platter or baking sheet over the baking dish.
Carefully and quickly flip the entire dish upside down.
Lift the baking dish away and allow the warm caramel and pecans to cascade over the buns.
