For the Lamb Chops
- 8 lamb loin or rib chops
- 3 tablespoons olive oil
- 4 cloves garlic, minced

- 1½ lbs (680 g) baby potatoes, halved

1. Marinate the Lamb
Place the lamb chops in a shallow dish.
Add olive oil, minced garlic, rosemary, thyme, parsley, lemon juice, salt, pepper, and paprika.
Rub the mixture thoroughly over both sides of the lamb.
Let the chops marinate for at least 20–30 minutes. For deeper flavor, refrigerate for up to 4 hours and bring them toward room temperature before cooking.
2. Roast the Potatoes
Preheat the oven to 425°F (220°C).
Place the halved potatoes on a large baking sheet.
Toss with olive oil, garlic powder, rosemary, salt, and black pepper.
Arrange them cut-side down and roast for 25–30 minutes, turning once halfway through, until golden and crispy.
3. Add the Broccoli
While the potatoes are roasting, toss the broccoli with olive oil, garlic, salt, and black pepper.
After the potatoes have roasted for about 20 minutes, add the broccoli to the baking sheet.
Continue roasting for another 12–15 minutes, until the broccoli is tender with lightly browned edges.
Sprinkle with Parmesan if desired.
4. Cook the Lamb Chops
Heat a large skillet over medium-high heat.
Add a small amount of olive oil if needed.
Place the lamb chops in the hot skillet without overcrowding.
Cook for approximately 3–4 minutes per side, depending on thickness and desired doneness.
For food safety, use an instant-read thermometer to check the internal temperature. For lamb, the USDA recommends 145°F (63°C) followed by a 3-minute rest.
5. Rest the Lamb
Transfer the cooked lamb chops to a plate.
Loosely cover with foil and let them rest for 3–5 minutes before serving.
