- ½ teaspoon black pepper

👩🍳 Instructions
1. Prepare the Pork
Pat the pork shoulder dry with paper towels.
Combine the salt, pepper, paprika, garlic powder, onion powder, brown sugar, and cayenne pepper.
Rub the seasoning mixture generously all over the pork.
2. Sear the Pork
Heat the olive oil in a large skillet over medium-high heat.
Sear the pork for 2–3 minutes per side, until browned.
This step is optional, but it adds extra depth of flavor.
3. Make the Carolina Sauce
In a bowl, whisk together the apple cider vinegar, ketchup, brown sugar, mustard, Worcestershire sauce, smoked paprika, garlic powder, black pepper, cayenne, and salt.
Taste and adjust the sweetness or tanginess to your preference.
4. Slow Cook
Place the pork shoulder in the crockpot.
Pour about ¾ of the sauce over the pork, reserving the rest for serving.
Cover and cook on:
- LOW: 8–10 hours
- HIGH: 5–6 hours
The pork should be very tender and easily pull apart with a fork.
5. Shred the Pork
Transfer the cooked pork to a large bowl or cutting board.
Remove any large pieces of fat and connective tissue.
Use two forks to shred the pork into bite-sized pieces.
Return the shredded pork to the crockpot and stir it into the cooking juices.
Let it sit for another 15–20 minutes on LOW or WARM so it can absorb the flavors.
🥪 Assemble the Sandwiches
Toast the hamburger buns lightly if desired.
Pile a generous amount of pulled pork onto each bun.
Top with creamy coleslaw and pickles.
Drizzle with additional Carolina BBQ sauce and serve immediately.
⭐ Tips for the Best Pulled Pork
- Use pork shoulder or pork butt: The marbling and connective tissue make it ideal for slow cooking.
- Don’t rush the cooking process. The pork is ready when it shreds easily.
- Carolina-style barbecue is traditionally vinegar-forward, so the sauce should have a noticeable tang.
- Add extra cayenne for a spicier sauce.
- For a sweeter BBQ sauce, increase the brown sugar slightly.
- Don’t discard the cooking juices—they help keep the shredded pork moist and flavorful.
