Ingredients
For the Banana Bread
- 3 very ripe bananas, mashed
- ½ cup unsalted butter, melted
- ¾ cup brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1½ cups all-purpose flour
- 1 teaspoon baking soda
- ½ teaspoon ground cinnamon
- ¼ teaspoon salt
- ¾ cup chopped pecans
For the Caramel
- ½ cup brown sugar
- ¼ cup unsalted butter
- ¼ cup heavy cream
- 1 teaspoon vanilla extract
- Pinch of salt
Optional Topping
- ¼ cup chopped toasted pecans
- Extra caramel sauce
- Flaky sea salt
Directions
1. Prepare the Oven and Pan
Preheat the oven to 350°F (175°C).
Grease a 9×5-inch loaf pan and line it with parchment paper, leaving some overhang for easy removal.
2. Make the Banana Batter
In a large bowl, whisk together the mashed bananas, melted butter, brown sugar, eggs, and vanilla until smooth.
In a separate bowl, whisk together the flour, baking soda, cinnamon, and salt.
Gradually add the dry ingredients to the banana mixture.
Stir just until combined.
Fold in the chopped pecans.
Don’t overmix the batter.
3. Add the Batter to the Pan
Pour half of the batter into the prepared loaf pan.
Drizzle a few spoonfuls of caramel sauce over the batter.
Add the remaining batter and smooth the top.
Drizzle a little more caramel over the surface and gently swirl it with a knife.
4. Bake
Bake for 50–60 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs.
If the top becomes too brown before the center is done, loosely cover the loaf with foil.
Allow the bread to cool in the pan for about 15 minutes, then transfer it to a wire rack.
5. Make the Caramel Sauce
While the bread cools, combine the brown sugar, butter, and heavy cream in a small saucepan over medium-low heat.
Stir constantly until the butter melts and the mixture begins to gently simmer.
Cook for approximately 2–3 minutes.
Remove from the heat and stir in the vanilla and salt.
Let the caramel cool slightly so it thickens.
6. Finish the Bread
Drizzle the warm caramel sauce generously over the cooled banana bread.
Sprinkle with toasted pecans and a small pinch of flaky sea salt if desired.
7. Slice and Serve
Allow the caramel to set for a few minutes before slicing.
Serve thick slices on their own or warm them slightly and top with vanilla ice cream.
Recipe Tips
- Use very ripe bananas with plenty of brown spots for the sweetest flavor.
- Toast the pecans for 5–7 minutes at 350°F (175°C) before adding them for extra flavor.
- Don’t overmix the batter, or the bread may become dense.
- Let the loaf cool before adding the final caramel drizzle.
- Add a few chocolate chips to the batter for an extra-decadent version.
- Store covered at room temperature for 2–3 days or refrigerate for up to 5 days.
- The finished loaf can also be wrapped tightly and frozen for up to 3 months.
