Crockpot Lil Smokies, Potatoes & Green Beans
These Crockpot Lil Smokies, Potatoes & Green Beans are an easy, hearty comfort meal made with smoky cocktail sausages, tender potatoes, and green beans simmered together in a flavorful buttery broth. It’s a simple dump-and-go dinner that’s perfect for busy weeknights.
Ingredients
- 2 packages (14 oz each) Lil Smokies or smoked cocktail sausages
- 1½ lb (680 g) baby potatoes, halved
- 1½ lb (680 g) fresh green beans, trimmed
- 1 medium onion, sliced
- 3 cloves garlic, minced
- 1½ cups chicken broth
- 4 tablespoons unsalted butter, melted
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- ½ teaspoon smoked paprika
- ½ teaspoon dried thyme
- ½ teaspoon black pepper
- ¼ teaspoon salt, or to taste
- 1 tablespoon chopped fresh parsley
Directions
1. Prepare the Ingredients
Wash the baby potatoes and cut them in half.
Trim the green beans and slice the onion.
2. Layer the Crockpot
Place the potatoes in the bottom of a 6-quart slow cooker.
Add the onion and minced garlic.
Arrange the green beans and Lil Smokies over the top.
3. Add the Seasonings
Sprinkle the garlic powder, onion powder, smoked paprika, thyme, and black pepper evenly over everything.
Drizzle with the melted butter.
Pour the chicken broth around the sides of the slow cooker.
Because the sausages and broth can already be salty, add additional salt only if needed.
4. Slow Cook
Cover and cook on:
- LOW for 5–6 hours, or
- HIGH for 3–4 hours
Cook until the potatoes and green beans are tender and the sausages are heated through.
5. Finish
Gently stir the ingredients together so the buttery cooking juices coat the potatoes and green beans.
Taste and adjust the seasoning.
Sprinkle with fresh parsley.
6. Serve
Serve hot in bowls with plenty of the flavorful cooking juices.
