Crockpot Ham, Green Beans and Potatoes
This Crockpot Ham, Green Beans and Potatoes is a simple, hearty comfort meal made with tender potatoes, savory ham, and flavorful green beans. Everything cooks together in the slow cooker, creating a satisfying family dinner with very little hands-on work.
Ingredients
- 2 lb (900 g) smoked ham, cut into bite-sized pieces
- 1½ lb (680 g) baby red or yellow potatoes, halved
- 1½ lb (680 g) fresh green beans, trimmed
- 1 medium onion, sliced
- 3 cloves garlic, minced
- 2 cups chicken broth
- 2 tablespoons butter
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- ½ teaspoon black pepper
- ½ teaspoon smoked paprika
- ½ teaspoon dried thyme
- ¼ teaspoon salt, or to taste
- 1 tablespoon fresh parsley, chopped
Directions
1. Prepare the Ingredients
Wash the potatoes and cut larger ones in half.
Trim the green beans and cut them into manageable pieces.
Cut the ham into bite-sized chunks and slice the onion.
2. Layer the Crockpot
Place the potatoes in the bottom of a 6-quart slow cooker.
Add the sliced onion and minced garlic.
Arrange the green beans and ham over the potatoes.
3. Add Seasonings and Broth
Sprinkle the onion powder, garlic powder, smoked paprika, thyme, and black pepper over the ingredients.
Add the butter.
Pour the chicken broth around the sides.
Because ham can be quite salty, wait until the end before adding additional salt.
4. Slow Cook
Cover and cook on:
- LOW for 5–6 hours, or
- HIGH for 3–4 hours
Cook until the potatoes are fork-tender and the green beans are cooked to your preferred tenderness.
5. Check the Seasoning
Taste the cooking broth.
Add salt only if needed, since the ham and broth may already provide plenty of salt.
6. Garnish and Serve
Sprinkle with fresh parsley.
Spoon the tender potatoes, green beans, and ham onto plates or into bowls.
Serve warm with cornbread, biscuits, or crusty bread.
Recipe Tips
- Use smoked ham or leftover cooked ham for a rich, savory flavor.
- Fresh green beans provide the best texture, but frozen green beans can also be used.
- Cut the potatoes into similar-sized pieces so they cook evenly.
- For extra flavor, add a small splash of apple cider vinegar to the finished dish.
- If using particularly salty ham, use low-sodium broth and skip the additional salt.
- Leftovers can be refrigerated in an airtight container for 3–4 days.
- Reheat gently on the stovetop or in the microwave until heated through.
