Ingredients
For the Sweet Potato Filling
- 2½ cups mashed cooked sweet potatoes
- ½ cup brown sugar
- ¼ cup granulated sugar
- 2 large eggs
- 1 cup evaporated milk
- ½ cup heavy cream
- 4 tablespoons melted butter
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- ½ teaspoon ground nutmeg
- ¼ teaspoon ground allspice
- ¼ teaspoon salt
For the Cobbler Topping
- 1 cup all-purpose flour
- ½ cup granulated sugar
- 1½ teaspoons baking powder
- ¼ teaspoon salt
- 4 tablespoons cold butter, cut into small pieces
- ½ cup milk
- 1 teaspoon vanilla extract
Optional Toppings
- Toasted coconut
- Chopped pecans
- Whipped cream
- Vanilla ice cream
- Caramel sauce
Directions
1. Prepare the Sweet Potatoes
Peel and cube the sweet potatoes.
Boil them in lightly salted water for 15–20 minutes, or until fork-tender.
Drain well and mash until smooth.
Measure out 2½ cups for the recipe.
2. Make the Filling
Preheat the oven to 350°F (175°C).
In a large bowl, whisk together the mashed sweet potatoes, brown sugar, granulated sugar, eggs, evaporated milk, heavy cream, melted butter, and vanilla.
Add the cinnamon, nutmeg, allspice, and salt.
Mix until smooth and creamy.
3. Prepare the Cobbler Topping
In another bowl, whisk together the flour, sugar, baking powder, and salt.
Cut in the cold butter with a pastry cutter or your fingertips until the mixture resembles coarse crumbs.
Pour in the milk and vanilla.
Stir just until a soft dough forms. Don’t overmix.
4. Assemble
Lightly grease a 9×13-inch baking dish.
Pour the sweet potato mixture evenly into the dish.
Drop spoonfuls of the topping dough over the surface, leaving a few small spaces between them.
5. Bake
Bake for 40–50 minutes, until the topping is golden brown and the sweet potato pudding is mostly set with a slight soft jiggle in the center.
6. Cool Slightly
Remove from the oven and allow the cobbler pudding to cool for 15–20 minutes.
The filling will continue to set as it cools.
7. Serve
Spoon warm portions into bowls.
Top with whipped cream or a scoop of vanilla ice cream.
For an extra Caribbean-inspired touch, sprinkle with toasted coconut or chopped pecans.
Recipe Tips
- Use orange-fleshed sweet potatoes for a naturally sweet and colorful pudding.
- Roast the sweet potatoes instead of boiling them for a deeper, more concentrated flavor.
- Don’t overmix the topping or it can become dense.
- Add 1–2 tablespoons of dark rum to the filling for an optional adult variation.
- Coconut milk can replace some of the evaporated milk for extra tropical flavor.
- Add raisins, shredded coconut, or chopped pecans to the filling if desired.
- Refrigerate leftovers in a covered container for 3–4 days.
