Strawberry Sensation Ice Cream
This Strawberry Sensation Ice Cream is creamy, fruity, and bursting with fresh strawberry flavor. Made with sweet strawberries, rich cream, and a smooth vanilla base, this homemade ice cream is a refreshing treat for warm days, family gatherings, or whenever you’re craving something sweet and cold.
Ingredients
- 2 cups fresh strawberries, hulled and chopped
- ¾ cup granulated sugar, divided
- 2 cups heavy whipping cream
- 1 cup whole milk
- 1 teaspoon vanilla extract
- ¼ teaspoon salt
- 1 tablespoon lemon juice
- ½ cup finely chopped strawberries, optional, for extra texture
Directions
1. Prepare the Strawberries
Place the chopped strawberries in a bowl.
Add ¼ cup of the sugar and the lemon juice.
Stir well and let the strawberries sit for 15–20 minutes until they become juicy.
2. Blend the Strawberries
Transfer the strawberries and their juices to a blender or food processor.
Blend until mostly smooth.
For a chunkier ice cream, leave a few small pieces of strawberry intact.
3. Make the Cream Base
In a large bowl, whisk together the heavy cream, whole milk, remaining sugar, vanilla extract, and salt.
Continue whisking until the sugar has dissolved.
4. Combine
Pour the strawberry mixture into the cream base.
Stir until evenly combined.
If using extra chopped strawberries, fold them in now.
5. Chill the Mixture
Cover the bowl and refrigerate for at least 2 hours, or until thoroughly chilled.
For the best texture, chill it overnight.
6. Churn
Pour the chilled mixture into an ice cream maker.
Churn according to the manufacturer’s instructions, usually 20–30 minutes, until thick and creamy.
7. Freeze
Transfer the soft ice cream to a freezer-safe container.
Smooth the top and cover tightly.
Freeze for at least 4 hours, or until firm.
8. Serve
Let the ice cream sit at room temperature for 5–10 minutes before scooping.
Serve with fresh strawberries, whipped cream, or a drizzle of strawberry sauce.
No Ice Cream Maker Method
Pour the prepared mixture into a shallow freezer-safe container.
Freeze for about 45 minutes, then stir vigorously with a whisk or electric mixer.
Repeat every 30–45 minutes for about 3 hours to help break up ice crystals.
Freeze until completely firm.
Recipe Tips
- Use ripe, sweet strawberries for the strongest natural flavor.
- Chilling the mixture thoroughly before churning produces a smoother texture.
- A little lemon juice brightens the strawberry flavor without making the ice cream taste strongly of lemon.
- For a richer texture, use full-fat milk and heavy cream.
- Add white chocolate chips or crushed cookies for a fun variation.
- Store in an airtight freezer-safe container for up to 2 weeks for the best texture.
