- ¼ teaspoon black pepper
For the Plate
- 2 large eggs
- 1 ripe avocado, sliced
- 1 cup cherry tomatoes, halved

- 1 tablespoon chopped fresh parsley or cilantro
- 1 teaspoon lemon or lime juice
Optional Additions
- ½ cup cooked black beans
- ½ cup cooked quinoa

Directions
1. Season the Steak
Pat the steak dry with paper towels.
Rub both sides with olive oil, garlic powder, smoked paprika, salt, and black pepper.
2. Cook the Steak
Heat a heavy skillet over medium-high heat.
Add the steak and cook for approximately 3–5 minutes per side, depending on thickness and your preferred doneness.
For food safety, use a thermometer and cook according to your preferred safe temperature.
Transfer the steak to a cutting board and let it rest for 5 minutes.
3. Cook the Eggs
While the steak rests, prepare the eggs in the same skillet.
Cook them sunny-side up, over-easy, scrambled, or poached—whatever you prefer.
4. Prepare the Vegetables
Arrange the mixed greens, cherry tomatoes, cucumber, red onion, and avocado on a large plate.
Drizzle the avocado and vegetables with lemon or lime juice.
5. Slice the Steak
Cut the rested steak against the grain into thin strips or bite-sized pieces.
6. Assemble the Power Plate
Arrange the sliced steak and eggs alongside the avocado and vegetables.
Add black beans or quinoa if desired.
Finish with fresh herbs, feta, hot sauce, or jalapeños.
Serve immediately.
Recipe Tips
- Sirloin, ribeye, or strip steak can all work well.
- Let the steak rest before slicing to help retain its juices.
- Slice against the grain for a more tender bite.
- Add roasted sweet potatoes for a more substantial meal.
- For meal prep, keep the avocado separate until serving to prevent browning.
