Beef Cowboy Soup
This hearty Beef Cowboy Soup is loaded with tender beef, potatoes, vegetables, beans, and tomatoes in a rich, savory broth. It’s an old-fashioned comfort meal that’s easy to make, filling, and perfect for feeding the whole family on a chilly day.
Ingredients
- 1½ lb (680 g) beef stew meat, cut into bite-sized pieces
- 1 tablespoon olive oil
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 4 medium potatoes, peeled and diced
- 2 carrots, sliced
- 2 celery stalks, sliced
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 can (14.5 oz) diced tomatoes
- 1 can (8 oz) tomato sauce
- 5 cups beef broth
- 1 tablespoon Worcestershire sauce
- 1 teaspoon chili powder
- 1 teaspoon paprika
- 1 teaspoon dried oregano
- ½ teaspoon cumin
- 1 teaspoon salt
- ½ teaspoon black pepper
- 2 tablespoons chopped fresh parsley, optional
Directions
1. Brown the Beef
Heat the olive oil in a large Dutch oven or heavy-bottomed pot over medium-high heat.
Add the beef in batches and brown for about 2–3 minutes per side.
Don’t overcrowd the pot, or the beef may steam instead of browning.
Transfer the browned beef to a plate.
2. Sauté the Aromatics
Add the chopped onion to the same pot.
Cook for 3–4 minutes, until softened.
Add the minced garlic and cook for another 30 seconds.
3. Add the Broth and Seasonings
Return the beef to the pot.
Pour in the beef broth and add the Worcestershire sauce, chili powder, paprika, oregano, cumin, salt, and black pepper.
Stir well, scraping up any browned bits from the bottom of the pot.
4. Add the Vegetables
Stir in the potatoes, carrots, celery, diced tomatoes, tomato sauce, kidney beans, and corn.
Bring the soup to a gentle boil.
5. Simmer
Reduce the heat to low and cover.
Simmer for 60–75 minutes, stirring occasionally, until the beef is tender and the potatoes and carrots are cooked through.
6. Adjust the Soup
Taste and adjust the seasonings as needed.
If you prefer a thicker soup, simmer uncovered for another 10–15 minutes.
If the soup becomes too thick, add a little extra beef broth.
7. Serve
Ladle the hot soup into bowls and garnish with fresh parsley.
Serve with warm cornbread, crusty bread, or crackers.
