Crockpot Cowboy Soup

Ingredients
- 1½ lb (680 g) ground beef
- 1 small onion, chopped
- 3 cloves garlic, minced
- 4 medium potatoes, peeled and diced
- 2 carrots, sliced
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 can (14.5 oz) diced tomatoes
- 1 can (8 oz) tomato sauce
- 4 cups beef broth
- 1 teaspoon chili powder
- 1 teaspoon paprika
- 1 teaspoon Italian seasoning
- ½ teaspoon cumin
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 tablespoon Worcestershire sauce
- 2 tablespoons chopped fresh parsley, optional
Directions
1. Brown the Beef
Heat a large skillet over medium-high heat.
Add the ground beef and chopped onion. Cook for 6–8 minutes, breaking up the beef as it cooks, until the meat is browned and the onion has softened.
Add the minced garlic and cook for another 30–60 seconds.
Drain excess grease if needed.
2. Add Everything to the Crockpot
Transfer the cooked beef mixture to a 6-quart slow cooker.
Add the diced potatoes, carrots, kidney beans, corn, diced tomatoes, tomato sauce, and beef broth.
Sprinkle in the chili powder, paprika, Italian seasoning, cumin, salt, and black pepper.
Add the Worcestershire sauce and stir everything together.
3. Slow Cook
Cover and cook on:
- LOW for 7–8 hours, or
- HIGH for 3½–4½ hours
Cook until the potatoes and carrots are tender and the soup is hot throughout.
4. Adjust the Consistency
Give the soup a good stir.
If you prefer a thicker soup, leave the lid slightly ajar and cook on HIGH for another 15–20 minutes.
If it is too thick, add a little extra beef broth.
5. Taste and Serve
Taste and adjust the seasonings as needed.
Garnish with fresh parsley if desired.
Ladle the hot soup into bowls and serve with crusty bread, cornbread, or crackers.
