Easiest Muffins
These easy homemade muffins are soft, fluffy, and lightly sweet with simple ingredients. They come together quickly without a mixer, making them perfect for breakfast, snacks, or an afternoon treat.
Ingredients
- 2 cups all-purpose flour
- ½ cup granulated sugar
- 2 teaspoons baking powder
- ½ teaspoon salt
- 1 large egg
- 1 cup milk
- ½ cup melted butter
- 1 teaspoon vanilla extract

- 1 cup chocolate chips
- 1 cup fresh or frozen blueberries

Directions
1. Prepare the Oven
Preheat your oven to 375°F (190°C).
Line a 12-cup muffin pan with paper liners or lightly grease each cup.
2. Mix the Dry Ingredients
In a large bowl, whisk together the flour, sugar, baking powder, and salt.
3. Mix the Wet Ingredients
In another bowl, whisk together the egg, milk, melted butter, and vanilla extract.
Make sure the melted butter has cooled slightly before adding it.
4. Combine
Pour the wet ingredients into the dry ingredients.
Gently stir until just combined. Don’t overmix—the batter should still have a few small lumps.
If using chocolate chips, blueberries, or nuts, gently fold them in.
5. Fill the Muffin Cups
Divide the batter evenly among the muffin cups, filling each about ¾ full.
6. Bake
Bake for 18–22 minutes, or until the tops are lightly golden and a toothpick inserted into the center comes out clean.
7. Cool and Serve
Let the muffins cool in the pan for about 5 minutes, then transfer them to a wire rack.
Serve warm or at room temperature with butter, jam, or honey.
