This Hashbrown Chicken Casserole is the ultimate easy comfort food. Tender shredded chicken, crispy hash browns, creamy sauce, and plenty of melted cheddar come together in one hearty, family-friendly casserole. It’s perfect for a cozy weeknight dinner, potluck, or make-ahead meal.
Ingredients
- 3 cups cooked shredded chicken
- 1 bag (30 oz / 850 g) frozen shredded hash browns, thawed
- 1 can (10.5 oz) cream of chicken soup
- 1 cup sour cream
- ½ cup milk
- 2 cups shredded cheddar cheese, divided
- ½ cup finely chopped onion
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ½ teaspoon salt
- ½ teaspoon black pepper
- 2 tablespoons melted butter
- ½ cup crushed cornflakes or buttery crackers, optional
Directions
1. Preheat the Oven
Preheat your oven to 375°F (190°C).
Lightly grease a 9×13-inch baking dish with cooking spray or butter.
2. Make the Creamy Mixture
In a large bowl, combine the cream of chicken soup, sour cream, milk, garlic powder, onion powder, salt, and black pepper.
Stir until smooth and well combined.
3. Combine the Filling
Add the shredded chicken, thawed hash browns, chopped onion, and 1½ cups of shredded cheddar cheese.
Gently stir until everything is evenly coated with the creamy mixture.
4. Transfer to the Baking Dish
Spread the mixture evenly into the prepared baking dish.
Smooth the top with the back of a spoon.
5. Add the Topping
Sprinkle the remaining ½ cup cheddar cheese over the top.
For an extra-crispy topping, combine the crushed cornflakes or crackers with melted butter and sprinkle evenly over the cheese.
6. Bake
Cover the casserole loosely with aluminum foil and bake for 30 minutes.
Remove the foil and continue baking for another 15–20 minutes, until the casserole is hot and bubbling and the top is golden brown.
7. Rest and Serve
Remove from the oven and let the casserole rest for 5–10 minutes before serving.
Scoop into portions and serve warm.
Recipe Tips
- Thaw and drain the hash browns well to prevent the casserole from becoming watery.
- Rotisserie chicken is a convenient option for the shredded chicken.
- Add cooked bacon, diced ham, broccoli, or green onions for extra flavor.
- Use sharp cheddar for a stronger cheesy flavor.
- For a crispier topping, leave the casserole uncovered during the final baking stage.
- Leftovers can be refrigerated in an airtight container for 3–4 days.
Make-Ahead Instructions
Assemble the casserole without the final topping, cover tightly, and refrigerate for up to 24 hours.
When ready to bake, add the cheese and optional crunchy topping. Bake until heated through and bubbling, adding a little extra time if the casserole is very cold.
