Garlic Cheese Bread Squares
These garlic cheese bread squares are soft, buttery, and loaded with melted mozzarella and fragrant herbs. Each bite has crispy golden edges, a tender center, and plenty of cheesy garlic flavor. They’re perfect as an appetizer, snack, or side dish for pasta, soup, or salad.
Ingredients
- 1 large loaf Italian or French bread
- ½ cup unsalted butter, softened
- 4 cloves garlic, finely minced
- 1½ cups shredded mozzarella cheese
- ¼ cup grated Parmesan cheese
- 1 teaspoon dried Italian seasoning
- 1 tablespoon chopped fresh parsley
- ½ teaspoon dried oregano
- ¼ teaspoon black pepper
- Pinch of salt
Directions
1. Prepare the Bread
Preheat your oven to 375°F (190°C).
Place the loaf on a cutting board and cut it into evenly sized squares, being careful not to slice completely through the bottom. This will help the bread pull apart easily after baking.
2. Make the Garlic Butter
In a small bowl, combine the softened butter, minced garlic, Italian seasoning, oregano, parsley, black pepper, and a small pinch of salt.
Mix until everything is evenly incorporated.
3. Add the Garlic Butter
Gently spread the garlic butter into the cuts and across the top of the bread, making sure it reaches between the sections.
4. Add the Cheese
Stuff shredded mozzarella into the cuts between the bread squares.
Sprinkle Parmesan evenly over the top.
5. Bake
Wrap the bread loosely in aluminum foil and place it on a baking sheet.
Bake for 10–12 minutes.
Open the foil and continue baking for another 5–8 minutes, until the cheese is completely melted and the edges are golden and crisp.
For an extra-golden cheese topping, broil for 1–2 minutes, watching carefully.
6. Finish With Herbs
Remove from the oven and sprinkle with additional fresh parsley or Italian herbs.
Let it cool for a couple of minutes before cutting or pulling apart.

Recipe Tips
- Use freshly shredded mozzarella for the best melting texture.
- Add cheddar or provolone for a stronger cheese flavor.
- Don’t cut completely through the bread so the squares stay connected.
- For extra garlic flavor, add a small amount of roasted garlic to the butter.
- Keep an eye on the bread while broiling because the cheese can brown quickly.
