This Creamy French Onion Soup in Sourdough Bread Bowls takes a classic comfort food and makes it extra special. Sweet caramelized onions simmer in a rich, creamy broth, then the soup is served inside warm sourdough bread bowls and topped with melted cheese. It’s cozy, hearty, and perfect for a chilly evening.
Ingredients
For the Soup
- 4 large yellow onions, thinly sliced
- 3 tablespoons unsalted butter
- 1 tablespoon olive oil
- 3 cloves garlic, minced
- 1 teaspoon sugar, optional
- ¼ cup all-purpose flour
- 4 cups beef broth
- 1 cup chicken broth
- 1 cup heavy cream
- 1 teaspoon Worcestershire sauce
- 1 teaspoon dried thyme
- ½ teaspoon salt
- ½ teaspoon black pepper
- ½ cup shredded Gruyère or Swiss cheese
- ¼ cup grated Parmesan cheese
For the Bread Bowls
- 4 small round sourdough loaves
- 1 tablespoon melted butter
- ½ teaspoon garlic powder
Directions
1. Prepare the Onions
Melt the butter with the olive oil in a large heavy-bottomed pot over medium heat.
Add the sliced onions and stir to coat them.
Cook for 10 minutes, stirring occasionally. Sprinkle in the sugar if using, then continue cooking for another 20–30 minutes, stirring frequently, until the onions become deeply golden and caramelized.
2. Add the Garlic
Add the minced garlic and cook for about 1 minute, stirring constantly.
Sprinkle the flour over the onions and stir well. Cook for another 1–2 minutes to remove the raw flour taste.
3. Add the Broth
Gradually pour in the beef broth and chicken broth while stirring.
Add the Worcestershire sauce, thyme, salt, and black pepper.
Bring the soup to a gentle simmer and cook for 15–20 minutes, allowing the flavors to develop.
4. Make It Creamy
Reduce the heat to low and slowly stir in the heavy cream.
Heat gently for another 5 minutes. Avoid bringing the soup to a vigorous boil after adding the cream.
Taste and adjust the seasoning as needed.
5. Prepare the Sourdough Bowls
Preheat the oven to 400°F (200°C).
Using a sharp knife, carefully cut a circle from the top of each sourdough loaf. Remove the center bread, leaving a thick enough shell to hold the soup.
Brush the inside lightly with melted butter mixed with garlic powder.
Place the bread bowls on a baking sheet and toast for 5–7 minutes.
6. Fill the Bread Bowls
Ladle the hot creamy onion soup into each toasted sourdough bowl.
Top generously with Gruyère or Swiss cheese and sprinkle with Parmesan.
7. Melt the Cheese
Return the filled bread bowls to the oven.
Bake for 5–8 minutes, or until the cheese is melted and bubbling.
For a more golden top, carefully broil for 1–2 minutes, watching closely so the bread doesn’t burn.
8. Serve
Carefully remove the bread bowls from the oven and let them cool for a couple of minutes.
Serve hot, enjoying the creamy soup along with pieces of the soft, toasted sourdough.
Recipe Tips
- Take your time caramelizing the onions. This is where much of the soup’s flavor develops.
- Keep the heat moderate so the onions become deeply golden without burning.
- Gruyère gives the most classic French onion flavor, but Swiss, mozzarella, or provolone can also work.
- Don’t hollow out the sourdough too much; leave enough bread around the edges and bottom to prevent leaking.
- For a deeper flavor, add a splash of dry white wine while cooking the onions, if desired.
- If the soup becomes too thick, add a little extra broth.
- Serve immediately for the best combination of creamy soup, melted cheese, and crisp sourdough.
