No-Bake Chocolate Peanut Butter Balls 🍫🥜
These No-Bake Chocolate Peanut Butter Balls are rich, creamy, and incredibly easy to make. A sweet peanut butter center is rolled into bite-sized balls and dipped in smooth chocolate—no oven required!
Ingredients
For the Peanut Butter Filling
- 1 cup creamy peanut butter
- ½ cup unsalted butter, softened
- 1½ cups powdered sugar
- 1 teaspoon vanilla extract
- 1½ cups crispy rice cereal, lightly crushed
For the Chocolate Coating
- 2 cups semi-sweet or milk chocolate chips
- 1 tablespoon coconut oil or shortening
Directions
1. Make the Peanut Butter Mixture
Add the peanut butter and softened butter to a large bowl.
Beat until smooth and creamy.
Add the powdered sugar and vanilla extract.
Mix until a thick dough forms.
2. Add the Crunch
Gently fold in the lightly crushed crispy rice cereal.
The mixture should be firm enough to shape. If it feels too soft, refrigerate it for 15–20 minutes.
3. Shape the Balls
Scoop out approximately 1 tablespoon of the mixture at a time.
Roll between your palms to form smooth balls.
Place them on a parchment-lined baking sheet.
Refrigerate for 20–30 minutes to firm them up.
4. Melt the Chocolate
Place the chocolate chips and coconut oil in a microwave-safe bowl.
Microwave in 20–30 second intervals, stirring well after each interval, until completely smooth.
Don’t overheat the chocolate.
5. Dip the Peanut Butter Balls
Using a fork or dipping tool, carefully dip each chilled peanut butter ball into the melted chocolate.
Allow excess chocolate to drip back into the bowl.
Place the coated balls back onto the parchment paper.
6. Let Them Set
Refrigerate for approximately 30 minutes, or until the chocolate coating is completely firm.
Optional Decorations
Before the chocolate sets, sprinkle the balls with:
- Crushed peanuts
- Flaky sea salt
- Chocolate sprinkles
- Shredded coconut
- Crushed pretzels
- Drizzled white chocolate
Tips for Perfect Peanut Butter Balls
Use regular creamy peanut butter: Natural peanut butter can sometimes make the filling too oily or loose.
Chill before dipping: Cold peanut butter balls are much easier to coat.
Don’t overheat the chocolate: Gentle melting produces a smoother coating.
Make them uniform: A small cookie scoop makes it easy to create evenly sized treats.
Storage
Store in an airtight container in the refrigerator for up to 1 week.
You can also freeze them for up to 2–3 months. Thaw them in the refrigerator before serving.
Creamy peanut butter, a little crispy crunch, and a smooth chocolate shell make these no-bake treats an irresistible bite-sized dessert!
