Ingredients
For the Roasted Chicken
- 2½–3 lb (1.1–1.4 kg) bone-in chicken pieces
- 2 tablespoons olive oil
- 1½ teaspoons paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried Italian seasoning
- 1 teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon dried thyme
- 3 cloves garlic, minced
- 1 tablespoon fresh lemon juice
For the Creamy Potato Salad
- 2 lb (900 g) potatoes, peeled and cubed
- ½ cup mayonnaise
- ¼ cup sour cream
- 1 tablespoon yellow mustard
- 1 tablespoon apple cider vinegar
- ½ teaspoon garlic powder
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 2 celery stalks, finely chopped
- ¼ cup finely chopped red onion
- 2 tablespoons chopped fresh parsley
- 2 hard-boiled eggs, chopped, optional
Directions
1. Prepare the Chicken
Preheat your oven to 425°F (220°C).
Pat the chicken pieces dry with paper towels. This helps the skin become crisp and golden.
Place the chicken in a large bowl.
Add olive oil, paprika, garlic powder, onion powder, Italian seasoning, salt, pepper, thyme, minced garlic, and lemon juice.
Toss thoroughly until every piece is evenly coated.
2. Arrange and Roast
Place the chicken pieces skin-side up on a large baking sheet or roasting pan.
Leave a little space between the pieces so hot air can circulate.
Roast for approximately 35–50 minutes, depending on the size and type of chicken pieces.
The chicken is safely cooked when the thickest part reaches 165°F (74°C) on an instant-read thermometer.
For extra-crispy skin, broil for 1–2 minutes at the end, watching carefully.
3. Rest the Chicken
Remove the chicken from the oven and let it rest for 5–10 minutes before serving.
This gives the juices time to redistribute.

4. Cook the Potatoes
Place the cubed potatoes in a large saucepan.
Cover with cold water and add a generous pinch of salt.
Bring to a boil, then reduce to a gentle simmer.
Cook for approximately 8–12 minutes, or until the potatoes are tender but still hold their shape.
Don’t overcook them.
5. Drain and Cool
Drain the potatoes thoroughly.
Spread them on a plate or baking sheet and allow them to cool for about 15–20 minutes.
6. Prepare the Dressing
In a large bowl, whisk together:
- Mayonnaise
- Sour cream
- Mustard
- Apple cider vinegar
- Garlic powder
- Salt
- Black pepper
Mix until smooth and creamy.
7. Combine
Add the cooled potatoes, celery, red onion, parsley, and chopped eggs if using.
Gently fold everything together.
Avoid vigorous stirring, which can break up the potatoes.
8. Chill
Cover and refrigerate the potato salad for at least 30 minutes before serving.
This allows the flavors to blend.
Serving
Place the roasted chicken pieces on a large serving platter.
Spoon the creamy potato salad alongside the chicken.
Garnish with fresh parsley and a little paprika for an inviting presentation.
For a complete meal, add:
- Steamed green beans
- Corn on the cob
- Fresh garden salad
- Dinner rolls
- Coleslaw
Tips for the Best Results
Dry the chicken first: Removing surface moisture helps create crispier skin.
Don’t overcrowd the pan: Give the chicken enough room to roast rather than steam.
Don’t overcook the potatoes: Tender potatoes that still hold their shape make the best potato salad.
Cool before dressing: Very hot potatoes can make the mayonnaise dressing greasy and runny.
Let the potato salad rest: Even 30 minutes in the refrigerator makes the flavor noticeably better.
Check the chicken temperature: A thermometer is the most reliable way to ensure the chicken is safely cooked.
Golden, herb-seasoned roasted chicken paired with cool, creamy potato salad makes an easy, satisfying dinner that’s perfect for a Sunday meal, family gathering, or summer cookout.
