Ingredients
- 12 oz (340 g) rigatoni, penne, or spaghetti
- 2 medium eggplants
- 3 tablespoons olive oil, plus more for frying
- 3 cloves garlic, thinly sliced
- 1 can (28 oz/800 g) crushed tomatoes
- ½ teaspoon salt, plus more for the eggplant
- ¼ teaspoon black pepper
- ½ teaspoon red pepper flakes, optional
- ½ teaspoon dried oregano, optional
- ½ cup fresh basil leaves
- ¾ cup finely grated ricotta salata
- 1 tablespoon extra-virgin olive oil, for finishing
Directions
1. Prepare the Eggplant
Wash and dry the eggplants.
Cut them into approximately ½-inch cubes or thin slices.
Place them in a colander and sprinkle lightly with salt.
Let them sit for 20–30 minutes.
Pat them thoroughly dry with paper towels.
2. Fry the Eggplant
Heat olive oil in a large skillet over medium-high heat.
Working in batches, fry the eggplant until deep golden brown and tender, about 4–6 minutes per batch, turning occasionally.
Transfer the cooked eggplant to a plate lined with paper towels.
Don’t overcrowd the skillet, or the eggplant will steam instead of browning.
3. Make the Tomato Sauce
In a large skillet or saucepan, heat 3 tablespoons olive oil over medium heat.
Add the sliced garlic and cook for about 30–60 seconds, just until fragrant.
Add the crushed tomatoes, salt, black pepper, and red pepper flakes if using.
Reduce the heat and simmer for approximately 15–20 minutes, stirring occasionally, until the sauce thickens slightly.
4. Add the Eggplant
Reserve a handful of the fried eggplant for topping.
Add the remaining eggplant to the tomato sauce.
Stir gently and simmer for another 3–5 minutes so the flavors combine.
Tear in several fresh basil leaves.
5. Cook the Pasta
While the sauce is simmering, bring a large pot of generously salted water to a boil.
Cook the pasta according to the package directions until al dente.
Before draining, reserve about 1 cup of pasta water.
6. Combine Everything
Add the drained pasta directly to the tomato and eggplant sauce.
Toss well.
Add a splash of reserved pasta water if the sauce seems too thick.
Continue tossing for 1–2 minutes until the sauce coats the pasta beautifully.
7. Finish the Dish
Divide the pasta among serving plates.
Top with the reserved crispy eggplant.
Add plenty of fresh basil and a generous sprinkling of ricotta salata.
Finish with a drizzle of extra-virgin olive oil.
Serve immediately.
