Ingredients
For the French Toast
- 8 slices thick-cut bread, preferably brioche or Texas toast
- 3 large eggs
- ¾ cup whole milk
- 1 tablespoon granulated sugar
- 1 teaspoon vanilla extract
- ½ teaspoon ground cinnamon
- ¼ teaspoon salt
- 2 tablespoons butter, for cooking
For the Scrambled Eggs
- 6 large eggs
- 2 tablespoons milk or heavy cream
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 1 tablespoon butter
- 1 tablespoon chopped fresh chives, optional
For the Sausage
- 12 oz (340 g) breakfast sausage
- 1 tablespoon butter or cooking oil, if needed
For Serving
- Maple syrup
- Fresh berries
- Powdered sugar
- Butter
- Fresh fruit
Directions
1. Prepare the French Toast Mixture
In a shallow bowl, whisk together the eggs, milk, sugar, vanilla extract, cinnamon, and salt.
Whisk until completely combined.
2. Dip the Bread
Dip each slice of bread into the egg mixture.
Coat both sides, but don’t leave the bread soaking for too long or it may become soggy.
Thick-cut bread works particularly well because it absorbs the custard while maintaining its structure.
3. Cook the French Toast
Heat a large skillet or griddle over medium heat.
Add the butter and allow it to melt.
Place the soaked bread slices into the skillet.
Cook for approximately 2–4 minutes per side, until golden brown and slightly crisp around the edges.
Add a little more butter between batches if needed.
Transfer the cooked French toast to a plate and keep warm.
4. Cook the Sausage
Slice the breakfast sausage into rounds approximately ½-inch thick.
Heat a skillet over medium heat.
Arrange the sausage rounds in a single layer.
Cook for approximately 3–4 minutes per side, turning occasionally, until browned and cooked through.
If the sausage releases plenty of fat, there’s usually no need for additional oil.
Transfer to a plate lined with paper towels.
5. Prepare the Scrambled Eggs
Crack the eggs into a bowl.
Add the milk or cream, salt, and black pepper.
Whisk thoroughly until the mixture is smooth and slightly frothy.
6. Cook the Eggs Slowly
Melt the butter in a clean nonstick skillet over low to medium-low heat.
Pour in the eggs.
Allow them to sit for a few seconds, then gently push the eggs from the edges toward the center using a spatula.
Continue folding slowly until large, soft curds form.
Remove the pan from the heat while the eggs are still slightly glossy.
The residual heat will finish cooking them without making them dry.
7. Assemble the Breakfast
Place two slices of golden French toast on each plate.
Add a generous portion of fluffy scrambled eggs and several browned sausage rounds.
Serve with butter and warm maple syrup.
Add fresh berries or sliced fruit for a refreshing contrast.
Tips for Perfect French Toast
Use slightly stale bread: It absorbs the custard beautifully without falling apart.
Don’t oversoak: A quick dip is enough for most slices.
Cook over medium heat: Too much heat can burn the outside before the center cooks.
Use plenty of butter: It helps create a beautifully golden crust.
Tips for Fluffy Scrambled Eggs
Whisk thoroughly: Incorporating a little air helps create lighter eggs.
Cook gently: High heat makes scrambled eggs dry and rubbery.
Remove them slightly early: Eggs continue cooking from residual heat.
Don’t constantly stir: Gentle folding creates larger, softer curds.
Tips for Perfect Sausage Rounds
Cook the sausage over medium heat so the outside browns while the center cooks thoroughly.
If using raw sausage, make sure it reaches a safe internal temperature of 160°F (71°C) for pork or beef sausage.
For poultry sausage, cook to 165°F (74°C).
Easy Variations
Cinnamon French Toast
Add an extra ½ teaspoon cinnamon and a pinch of nutmeg to the custard.
Stuffed French Toast
Spread cream cheese or peanut butter between two slices before dipping and cooking.
Cheesy Scrambled Eggs
Add ½ cup shredded cheddar cheese during the final minute of cooking.
Spicy Sausage Breakfast
Use spicy breakfast sausage and serve with hot sauce.
Fruit-Topped French Toast
Top with sliced bananas, strawberries, blueberries, and a drizzle of maple syrup.
Make-Ahead Tips
The French toast can be cooked ahead and refrigerated for up to 3 days.
Reheat it in a toaster, skillet, or oven until warm.
The sausage can also be cooked ahead and reheated in a skillet or microwave.
For the best texture, prepare the scrambled eggs fresh.
Storage
Store leftover French toast, eggs, and sausage separately in airtight containers.
Refrigerate for up to 3–4 days.
Reheat thoroughly before serving.
