Ingredients
- 1½ pounds beef chuck roast, cut into 1-inch cubes

- 3 cloves garlic, minced
- 8 cups beef broth
- 1 can (14.5 ounces) diced tomatoes
- 2 tablespoons tomato paste

- 1 bay leaf

Directions
1. Prepare the Beef
Pat the beef cubes dry with paper towels. Season generously with salt and black pepper.

2. Brown the Beef
Heat olive oil in a large Dutch oven or heavy-bottomed soup pot over medium-high heat.

3. Sauté the Vegetables

8. Add the Peas
If using frozen peas, stir them into the soup during the final 5 minutes of cooking.

Remove the bay leaf before serving.
9. Finish and Serve
Ladle the hot soup into bowls and garnish with freshly chopped parsley.
