Sweet & Spicy Garlic Chutney 🌶️
This Sweet & Spicy Garlic Chutney is bold, tangy, slightly sweet, and packed with garlicky goodness. Made with fresh garlic, dried red chilies, vinegar, and a touch of sweetness, this easy homemade chutney is the perfect condiment for sandwiches, grilled meats, samosas, pakoras, burgers, wraps, and roasted vegetables. You can easily adjust the heat to suit your taste, making it as fiery or as mild as you like.
Ingredients
- ½ cup peeled garlic cloves
- 8–10 dried red chilies
- 2 tablespoons tomato paste
- 3 tablespoons vinegar
- 2 tablespoons brown sugar or honey
- ½ teaspoon salt
- ½ teaspoon cumin powder
- ¼ teaspoon smoked paprika
- 2 tablespoons water, plus more if needed
- 2 tablespoons vegetable oil or olive oil
Directions
1. Soak the Chilies
Remove the stems from the dried red chilies. If you prefer a milder chutney, remove some or all of the seeds.
Place the chilies in a bowl and cover them with hot water. Let them soak for 15–20 minutes, until softened.
Drain the chilies well before blending.
2. Blend the Ingredients
Add the soaked chilies, garlic cloves, tomato paste, vinegar, brown sugar, salt, cumin, paprika, and water to a blender or food processor.
Blend until you have a smooth, thick paste.
If the mixture is too thick to blend easily, add another tablespoon of water at a time until you reach the desired consistency.
3. Cook the Chutney
Heat the oil in a small saucepan over medium-low heat.
Carefully add the blended garlic and chili mixture.
Cook for approximately 5–8 minutes, stirring frequently.
The mixture will darken slightly, become thicker, and develop a deeper flavor. Keep the heat relatively low because garlic can burn quickly and become bitter.
4. Adjust the Flavor
Taste the chutney and adjust the seasoning.
- Add more sugar for extra sweetness.
- Add more vinegar for tanginess.
- Add additional chili for more heat.
- Add a pinch more salt if needed.
Remember that the flavors will become slightly more concentrated as the chutney cools.
5. Cool and Store
Remove the saucepan from the heat and allow the chutney to cool completely.
Transfer it to a clean, airtight glass jar.
For the best flavor, refrigerate it for several hours before serving. The garlic, chili, sweetness, and vinegar become even more balanced as the chutney rests.
Helpful Tips
Control the heat: Use fewer dried chilies for a mild chutney or add a few extra for serious heat. Mixing mild and hot dried chilies is another good way to control the flavor.
Use fresh garlic: Fresh garlic gives this chutney its strongest and most delicious flavor.
Don’t burn the garlic: Keep the cooking temperature low and stir regularly. Burnt garlic can quickly make the entire chutney bitter.
Make it smoother: Blend the mixture longer and strain it through a fine sieve if you prefer a silky-smooth chutney.
Make it chunkier: Pulse the ingredients instead of fully blending them for a more rustic texture.
