Ingredients
For the Brownie Layer
- 1 cup unsalted butter, melted
- 1½ cups granulated sugar
- ½ cup brown sugar
- 3 large eggs
- 2 teaspoons vanilla extract
- 1 cup all-purpose flour
- ¾ cup unsweetened cocoa powder
- ½ teaspoon salt
- ½ cup chocolate chips
- 3 regular-size Milky Way bars, chopped
For the Cheesecake Layer
- 8 ounces cream cheese, softened
- ⅓ cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 2 tablespoons all-purpose flour
For the Caramel Layer
- ¾ cup thick caramel sauce
- 1 tablespoon heavy cream, if needed
For the Topping
- 2 Milky Way bars, chopped
- ¼ cup caramel sauce
- ¼ cup melted chocolate, optional
- Pinch of flaky sea salt, optional
Instructions
1. Prepare the Oven
Preheat your oven to 350°F (175°C).
Line a 9×13-inch baking pan with parchment paper, leaving some paper hanging over the sides. Lightly grease the parchment.
The overhanging parchment will make it much easier to lift the brownies out after they cool.
2. Make the Brownie Batter
In a large bowl, whisk together the melted butter, granulated sugar, and brown sugar until smooth.
Add the eggs one at a time, whisking well after each addition.
Stir in the vanilla extract.
In a separate bowl, combine the flour, cocoa powder, and salt.
Gradually add the dry ingredients to the wet ingredients, mixing just until combined.
Don’t overmix the batter.
Fold in the chocolate chips and chopped Milky Way bars.
3. Make the Cheesecake Mixture
In another bowl, beat the softened cream cheese and sugar until smooth and creamy.
Add the egg, vanilla extract, and flour.
Beat until completely smooth with no visible lumps.
Set aside.
4. Layer the Brownies
Spread approximately two-thirds of the brownie batter evenly into the prepared pan.
Spoon the cheesecake mixture over the brownie layer and gently spread it into an even layer.
Drizzle about ½ cup of caramel sauce over the cheesecake layer.
Use a knife or toothpick to gently swirl the caramel through the cheesecake.
Spoon the remaining brownie batter over the top and carefully spread it out.
Don’t worry if it doesn’t completely cover the cheesecake layer.
5. Add the Milky Way Pieces
Scatter the chopped Milky Way bars over the top.
Gently press some of the pieces into the brownie batter.
Drizzle the remaining caramel sauce over the top.
6. Bake
Place the pan in the preheated oven and bake for approximately 35–42 minutes.
The edges should look set while the center remains slightly soft.
Don’t overbake. The brownies will continue to firm up as they cool.
A toothpick inserted into the brownie portion should come out with a few moist crumbs. Avoid inserting it directly into the cheesecake or caramel layers when testing.
7. Cool Completely
Remove the brownies from the oven and allow them to cool completely in the pan.
For the cleanest slices, refrigerate them for 1–2 hours after they reach room temperature.
Once chilled, lift the brownies from the pan using the parchment paper.
8. Add the Finishing Touches
Drizzle the top with additional caramel sauce and melted chocolate.
Sprinkle with chopped Milky Way pieces and, if desired, a tiny pinch of flaky sea salt.
Cut into squares with a sharp knife.
For cleaner cuts, wipe the knife between slices.
Tips for Perfect Brownies
Use room-temperature cream cheese: It creates a much smoother cheesecake layer.
Don’t overbake: Slightly underbaked brownies become wonderfully fudgy as they cool.
Chill before slicing: This helps the cheesecake layer set and makes the brownies much easier to cut.
Use thick caramel sauce: A very thin caramel sauce can sink too deeply into the batter.
Don’t over-swirl: A few gentle swirls create beautiful layers without blending everything together.
Easy Variations
Extra Chocolate
Add chocolate chips to the cheesecake layer or drizzle melted chocolate over the finished brownies.
Salted Caramel
Add flaky sea salt to the caramel topping for a delicious sweet-and-salty flavor.
More Candy
Mix additional chopped Milky Way pieces into the brownie batter.
Nutty Version
Add chopped pecans or walnuts for a crunchy contrast.
Storage
Store the brownies in an airtight container in the refrigerator for up to 5 days because of the cheesecake layer.
Allow them to sit at room temperature for about 10–15 minutes before serving for the best texture.
You can also freeze individually wrapped brownies for up to 2 months. Thaw overnight in the refrigerator.
