Meta Description: These Baked Spinach and Mushroom Quesadillas are crispy, cheesy, and packed with savory mushrooms and fresh spinach. An easy meatless dinner, lunch, or appetizer for the whole family.
These Baked Spinach and Mushroom Quesadillas are a delicious, easy, and satisfying meatless meal. Instead of standing over a skillet cooking each quesadilla individually, everything is assembled and baked in the oven until the tortillas become golden and crispy while the cheese melts into the savory spinach and mushroom filling.
The combination of earthy mushrooms, tender spinach, gooey cheese, garlic, and perfectly toasted tortillas makes these quesadillas incredibly flavorful. Serve them with salsa, guacamole, sour cream, or your favorite dipping sauce.
Ingredients
- 8 medium flour tortillas
- 2 tablespoons olive oil
- 8 ounces mushrooms, finely sliced
- 3 cups fresh spinach
- ½ medium onion, finely diced
- 2 cloves garlic, minced
- 2 cups shredded Monterey Jack cheese
- 1 cup shredded cheddar cheese
- ½ teaspoon cumin
- ½ teaspoon chili powder
- ½ teaspoon smoked paprika
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ¼ teaspoon red pepper flakes, optional
- 2 tablespoons fresh cilantro, chopped
For Serving
- Salsa
- Sour cream
- Guacamole
- Fresh cilantro
- Lime wedges
Instructions
1. Preheat the Oven
Preheat your oven to 425°F (220°C).
Line a large baking sheet with parchment paper and lightly brush it with olive oil.
2. Cook the Mushrooms
Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
Add the sliced mushrooms and cook for approximately 5–7 minutes, stirring occasionally.
Allow the mushrooms to release their moisture and continue cooking until they become nicely browned.
This step is important because removing excess moisture prevents the quesadillas from becoming soggy.
3. Add the Onion and Garlic
Add the diced onion to the skillet and cook for 3–4 minutes, until softened.
Add the minced garlic and cook for another 30 seconds.
Stir in the cumin, chili powder, smoked paprika, salt, black pepper, and red pepper flakes if using.
4. Add the Spinach
Add the fresh spinach to the skillet.
Cook for approximately 2–3 minutes, stirring frequently, until the spinach wilts.
Continue cooking until most of the moisture has evaporated.
Remove the skillet from the heat and let the filling cool for a few minutes.
5. Assemble the Quesadillas
Place four tortillas on the prepared baking sheet.
Sprinkle a layer of Monterey Jack and cheddar cheese over each tortilla.
Add an even layer of the spinach and mushroom mixture.
Sprinkle a little more cheese over the filling.
Place another tortilla on top of each quesadilla and gently press down.
Brush the tops lightly with the remaining olive oil.
6. Bake
Place the baking sheet in the preheated oven.
Bake for approximately 8–10 minutes, until the bottoms become golden and crisp.
Carefully flip each quesadilla.
Return them to the oven and bake for another 5–7 minutes, until both sides are crispy and the cheese is completely melted.
For an extra-golden finish, turn on the broiler for the final 1–2 minutes, watching carefully.
7. Slice and Serve
Remove the quesadillas from the oven and let them rest for 2–3 minutes.
Cut each quesadilla into wedges.
Garnish with fresh cilantro and serve immediately with salsa, sour cream, guacamole, and lime wedges.
Tips for the Best Baked Quesadillas
Cook the mushrooms thoroughly: Mushrooms contain a lot of water, so cooking them until browned helps prevent soggy quesadillas.
Drain the spinach: If your filling still contains excess liquid, gently press it with a spoon or drain it before assembling.
Don’t overfill: Too much filling can make the tortillas difficult to crisp and cause the cheese to spill out.
Use freshly shredded cheese: It melts more smoothly than many pre-shredded varieties.
Brush the tortillas with oil: A thin coating helps them become beautifully golden and crispy in the oven.
Easy Variations
Add Black Beans
Add ½–1 cup cooked black beans for extra protein and a heartier filling.
Add Corn
Stir in ½ cup sweet corn for a little natural sweetness.
Make Them Spicy
Add diced jalapeños, cayenne pepper, or extra red pepper flakes.
Add Chicken
Mix in shredded cooked chicken for a protein-rich version.
Use Different Cheese
Try pepper Jack, mozzarella, Oaxaca cheese, or a Mexican cheese blend.
Storage and Reheating
Store leftover quesadillas in an airtight container in the refrigerator for up to 3 days.
For the crispiest reheating, place them in an oven or air fryer at 350°F (175°C) until heated through.
Avoid reheating them for too long in the microwave, as the tortillas can become soft.
These Baked Spinach and Mushroom Quesadillas are crispy, cheesy, savory, and packed with delicious vegetables. They’re easy enough for a quick weeknight meal and versatile enough to customize with your favorite fillings and toppings.
